A refined twist on the classic French Niçoise salad, this dish replaces traditional tuna with delicate smoked salmon. Featuring crisp greens, tender potatoes, briny olives, and soft-boiled eggs, this salad is a vibrant explosion of flavors and textures perfect for a light but satisfying meal.
Bring a pot of salted water to boil. Add the halved baby potatoes and cook for 10-12 minutes until fork-tender. Remove from the water and let cool.
In the same boiling water, blanch the green beans for 2 minutes until vibrant green and slightly tender. Remove and immediately transfer to an ice bath to stop cooking.
Soft-boil the eggs by placing them in a saucepan with cold water. Bring to a simmer, cook for 7 minutes, then transfer to ice water. Peel and cut in half.
In a small bowl, whisk together olive oil, Dijon mustard, red wine vinegar, honey, minced garlic, salt, and black pepper.
On a serving platter, arrange butter lettuce leaves. Distribute halved potatoes, green beans, cherry tomatoes, olives, and red onion slices.
Lay the smoked salmon slices over the salad. Top with soft-boiled egg halves.
Drizzle the dressing over the salad just before serving.
