Ingredients
4ozpineapple juice120ml, freshly squeezed for best flavour
4ozorange juice120ml, freshly squeezed
2ozdark rum60ml, aged for deeper flavour
2ozlight rum60ml
1ozlime juice30ml, freshly squeezed, about 1 lime
½ozgrenadine15ml
½ozsimple syrup15ml, equal parts sugar and water
2dashesAngostura bitters
4wedgeslimefor garnish
4slicespineapplefor garnish
Instructions
This recipe makes 4 cocktails in a single batch. If your shaker is small, split the mixture and shake in two batches.
Combine the pineapple and orange juices with the dark and light rums in a shaker.
4 oz pineapple juice, 4 oz orange juice, 2 oz dark rum, 2 oz light rum
Add the lime juice, grenadine, simple syrup, and Angostura bitters to the mix.
1 oz lime juice, ½ oz grenadine, ½ oz simple syrup, 2 dashes Angostura bitters
Fill the shaker halfway with crushed ice and shake vigorously for 15 seconds until the outside of the shaker feels ice-cold. You will need approximately 4-6 cups of crushed ice total — enough to fill the shaker halfway for each shake and to fill four tall glasses.
Strain evenly into four tall glasses filled with fresh crushed ice.
Garnish with a lime wedge, pineapple slice, and a cocktail umbrella. Serve immediately.
