Instructions
In a large bowl, combine ground beef, breadcrumbs, egg, milk, grated onion, 1 tbsp Worcestershire sauce, salt, and pepper. Mix gently using your hands or a fork until just combined—do not overmix.
Divide mixture into 4 equal portions and form into oval-shaped patties, roughly 3/4 inch thick. Set aside on a sheet tray.
Heat 1 tbsp oil in a large skillet over medium-high heat (about 375°F / 190°C). Sear patties for 3–4 minutes per side, until a deep brown crust forms. Transfer to a plate; they’ll finish cooking in the gravy later.
In the same skillet, lower heat to medium. Add butter, then sauté sliced onions and mushrooms until deeply golden, about 8–10 minutes. Stir occasionally to prevent sticking and ensure even browning.
Sprinkle flour over the onions and mushrooms, cook for 1–2 minutes stirring constantly to eliminate raw flour taste.
Gradually pour in beef stock while stirring, then add Worcestershire sauce and thyme. Bring to a gentle simmer and cook for 3–4 minutes until thickened slightly.
Return steak patties to the skillet. Reduce heat to medium-low. Cover and simmer in the gravy for 15 minutes, or until steaks are cooked through (internal temperature of 160°F / 71°C).
Taste and adjust seasoning. Serve hot.
