This is a stovetop Salisbury steak made with 80/20 ground beef patties seared until browned, then finished in a pan gravy built from cremini mushrooms, sliced onions, beef stock, and Worcestershire sauce. The honest reason to make it: it takes about 55 minutes, uses one skillet, and the leftovers reheat better than almost any other ground beef dinner.

Before you start

Two things determine whether this dish works. First, don’t overwork the meat mixture — stir it just until the ingredients come together. Overworking develops the proteins and turns the patties dense and rubbery instead of tender. Second, give the onions and mushrooms the full 8–10 minutes in the pan before you add the flour. Rushing this step means pale, watery vegetables and a gravy that tastes flat. The browning is where the flavor comes from, so let it happen.

Smart swaps

  • Cremini mushrooms: White button mushrooms work fine. Avoid canned mushrooms — they release too much liquid and go soft before the onions have time to brown.
  • Beef stock: If you only have regular-sodium stock, skip the added salt in the gravy and taste at the end. Low-sodium gives you more control.
  • Fresh breadcrumbs: Tear a slice of sandwich bread and pulse it briefly, or let it go stale and crumble it by hand. Panko works in a pinch but makes the patties slightly firmer.
  • Whole milk: 2% is fine. Skip plant-based milks here — the fat in dairy helps bind the mixture and keeps the patties moist through the simmer.

If something goes sideways

  • Patties fall apart in the pan: They probably need another minute before you flip. A proper sear releases cleanly from the skillet — if it’s sticking, wait 30 more seconds.
  • Gravy is too thin after simmering: Remove the patties and let the gravy bubble uncovered on medium heat for 3–4 minutes. It will tighten up quickly without adding more flour.
  • Gravy is too thick or pasty: Add beef stock a splash at a time, stirring between additions, until it loosens to a pourable consistency.
  • Patties are cooked through but gravy tastes bland: A small splash of Worcestershire sauce stirred in at the end fixes this fast. Taste before you add salt — the stock and Worcestershire are already salty.
  • Mushrooms are releasing a lot of water and steaming instead of browning: Your pan is overcrowded. Skip the garnish — not worth the extra dish. Instead, spread the vegetables out and resist stirring for a full 2–3 minutes at a time so moisture can evaporate.

Storage and reheating

Store patties and gravy together in an airtight container in the fridge for up to 4 days — keeping them combined prevents the patties from drying out. To reheat, add everything to a skillet over medium-low heat with a small splash of beef stock or water, cover loosely, and warm for about 8 minutes, turning the patties once. The microwave works too: cover the dish and use 50% power in 90-second intervals to avoid toughening the meat. For the freezer, cool completely first, then freeze in portions for up to 3 months. Thaw overnight in the fridge before reheating. The gravy may look broken after freezing but comes back together once it’s warmed and stirred.

Ingredients
 
 

For the Salisbury Steaks:

  • 1 lb ground beef 80% lean recommended for best flavor and moisture
  • ⅓ cup plain breadcrumbs preferably fresh
  • 1 large egg room temperature
  • ¼ cup milk whole milk for richness
  • ¼ cup yellow onion finely grated or minced
  • 1 tbsp Worcestershire sauce
  • ½ tsp Kosher salt or to taste
  • ½ tsp ground black pepper freshly cracked
  • 1 tbsp neutral oil for searing, such as canola or vegetable

For the Onion-Mushroom Gravy:

  • 2 tbsp unsalted butter
  • 1 cup yellow onion thinly sliced
  • 8 oz cremini mushrooms sliced, fresh only
  • 2 tbsp all-purpose flour for thickening
  • 2 cups beef stock low sodium preferred
  • 1 tbsp Worcestershire sauce
  • ½ tsp thyme leaves fresh or 1/4 tsp dried

Instructions
 

  • In a large bowl, combine ground beef, breadcrumbs, egg, milk, grated onion, 1 tbsp Worcestershire sauce, salt, and pepper. Mix gently using your hands or a fork until just combined—do not overmix.
  • Divide mixture into 4 equal portions and form into oval-shaped patties, roughly 3/4 inch thick. Set aside on a sheet tray.
  • Heat 1 tbsp oil in a large skillet over medium-high heat (about 375°F / 190°C). Sear patties for 3–4 minutes per side, until a deep brown crust forms. Transfer to a plate; they’ll finish cooking in the gravy later.
  • In the same skillet, lower heat to medium. Add butter, then sauté sliced onions and mushrooms until deeply golden, about 8–10 minutes. Stir occasionally to prevent sticking and ensure even browning.
  • Sprinkle flour over the onions and mushrooms, cook for 1–2 minutes stirring constantly to eliminate raw flour taste.
  • Gradually pour in beef stock while stirring, then add Worcestershire sauce and thyme. Bring to a gentle simmer and cook for 3–4 minutes until thickened slightly.
  • Return steak patties to the skillet. Reduce heat to medium-low. Cover and simmer in the gravy for 15 minutes, or until steaks are cooked through (internal temperature of 160°F / 71°C).
  • Taste and adjust seasoning. Serve hot.

  • For a gluten-free version, use certified GF breadcrumbs and replace flour with cornstarch (use half the amount).
  • Cremini mushrooms can be swapped with button mushrooms, though the flavor will be lighter.
  • Soak grated onion in milk beforehand for a milder flavor in the patties.

Common questions

Can I make the patties ahead of time?

Yes — form the patties, cover them tightly, and refrigerate for up to 24 hours before cooking. Cold patties actually hold their shape better during searing, so making them the night before is a practical move.

Do I have to use 80/20 ground beef, or can I use leaner beef?

80/20 is strongly recommended. Leaner beef — 90/10 or higher — produces patties that are noticeably drier after simmering in the gravy, and the gravy itself will have less flavor since there’s less fat rendering into the pan.

Can I double the recipe without changing anything?

You can double the ingredients, but sear the patties in two batches rather than crowding the pan. Crowding drops the pan temperature and you’ll steam the patties instead of browning them — the gravy won’t have the same depth without those browned bits on the bottom of the skillet.
