Instructions
In a large stockpot or Dutch oven over medium heat, melt the butter (or heat the olive oil). Add the sliced leeks, minced garlic, and celery. Sauté for 2-3 minutes, stirring occasionally, until the leeks are softened and fragrant.
Add the curry powder and stir constantly for 1 minute until fragrant — this blooms the spices and intensifies their flavour. Add the rinsed lentils and pour in enough chicken stock to cover them by about 1 inch (2.5cm). Bring to a boil over high heat, then reduce to medium-low and maintain a steady simmer.
Check the pot every 5-10 minutes and add more stock as the lentils absorb it — you want the lentils to stay submerged. After about 15 minutes of simmering, add the sliced carrots, ground cumin, cayenne pepper, chopped lemon thyme, salt, and pepper. Stir well and continue to simmer for 25-30 more minutes until the lentils are completely tender and beginning to break down.
Stir in the coconut milk and heat through for 3-5 minutes, stirring occasionally. If using the chicken apple sausages, add the sliced sausages now and heat until warmed through. Taste and adjust the seasoning with more salt, pepper, or a squeeze of fresh lemon juice. Ladle into bowls and serve with crusty bread.
