This is a one-pot curried lentil and leek soup made with green or brown lentils, warm spices, and a full can of coconut milk stirred in at the end. It takes about an hour start to finish, and it reheats so well that making a full batch on Sunday means lunch or dinner is already handled for the next two or three days. The flavour is genuinely better the second day — the curry and cumin settle into the broth overnight in a way they just don’t fresh off the stove.

Before you start

The two things that actually matter here are blooming your spices and choosing the right lentils. Stirring the curry powder and cumin into the hot butter for a full minute before adding any liquid is not optional — it drives off the raw, dusty edge and deepens the flavour in a way that adding spices to the broth later simply won’t replicate. On lentils: this recipe calls for green or brown lentils, and that matters. Red lentils dissolve into a purée within 20 minutes; black lentils stay firm even after 45. Green and brown lentils break down partially but hold enough body to give the soup real texture without blending. Rinse them well and pick out any small stones before they go in.

Mistakes to avoid

  • Adding all the stock at once and walking away. Lentils absorb liquid unevenly. Add enough stock to cover by about an inch, then check every 5–10 minutes and top up as needed. Dumping in all two quarts upfront usually means watery soup — or a scorched bottom if the pot runs dry.
  • Skipping the coconut milk or adding it too early. Coconut milk is not a finishing garnish — it’s what makes this soup creamy rather than just spiced. Add it in the last 5 minutes of cooking, not at the start. Prolonged simmering can cause it to separate and turn grainy.
  • Not tasting the leeks before moving on. Leeks that are still crunchy at the end of the sauté step will stay slightly tough in the finished soup. Give them the full 2–3 minutes over medium heat until they’re soft and a little translucent before you add anything else.
  • Underseasoning and not adjusting at the end. The salt and cayenne in the recipe are starting points. Once the lentils are cooked and the coconut milk is in, taste again — lentils absorb a surprising amount of salt, and the coconut milk softens the heat. A second round of seasoning right before serving makes a real difference. Skip the garnish — not worth the extra dish.
  • Storing it without adding a splash of water or stock. This soup thickens considerably in the fridge as the lentils continue to absorb liquid. When reheating, stir in a few tablespoons of water or stock to loosen it back to the right consistency before it goes on the heat.

  • Wooden spoon or silicone spatula

Ingredients
 
 

  • 1 tablespoon butter
  • 1 tablespoon olive oil alternative to butter
  • 2 stalks leeks halved lengthwise and sliced
  • 3 cloves garlic minced
  • 1 rib celery sliced
  • 4 medium carrots peeled and sliced
  • 2 quarts chicken stock
  • 2 cups dried green or brown lentils rinsed well
  • 2 tablespoons curry powder
  • 1 tablespoon ground cumin
  • ¼ teaspoon cayenne pepper adjust to taste
  • 1 teaspoon salt adjust to taste
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon fresh lemon thyme leaves chopped (about 4-5 sprigs)
  • 1 can full-fat coconut milk 15 oz
  • 3 pieces chicken apple sausages cooked and sliced (optional)

Instructions
 

  • In a large stockpot or Dutch oven over medium heat, melt the butter (or heat the olive oil). Add the sliced leeks, minced garlic, and celery. Sauté for 2-3 minutes, stirring occasionally, until the leeks are softened and fragrant.
  • Add the curry powder and stir constantly for 1 minute until fragrant — this blooms the spices and intensifies their flavour. Add the rinsed lentils and pour in enough chicken stock to cover them by about 1 inch (2.5cm). Bring to a boil over high heat, then reduce to medium-low and maintain a steady simmer.
  • Check the pot every 5-10 minutes and add more stock as the lentils absorb it — you want the lentils to stay submerged. After about 15 minutes of simmering, add the sliced carrots, ground cumin, cayenne pepper, chopped lemon thyme, salt, and pepper. Stir well and continue to simmer for 25-30 more minutes until the lentils are completely tender and beginning to break down.
  • Stir in the coconut milk and heat through for 3-5 minutes, stirring occasionally. If using the chicken apple sausages, add the sliced sausages now and heat until warmed through. Taste and adjust the seasoning with more salt, pepper, or a squeeze of fresh lemon juice. Ladle into bowls and serve with crusty bread.

Yes — this soup is genuinely better made a day ahead. The spices meld into the broth overnight and the flavour deepens noticeably. Cool it completely, store it in an airtight container in the fridge for up to 4 days, and add a splash of stock or water when reheating since the lentils will have thickened it.

Can I freeze this soup?

Yes, it freezes well for up to 3 months. Coconut milk-based soups can sometimes look slightly separated after thawing, but a good stir over low heat brings it back together. Freeze in individual portions so you can pull out exactly what you need.

Can I make this vegetarian or vegan?

Yes — swap the chicken stock for vegetable broth and use olive oil instead of butter. Leave out the optional chicken apple sausages. The rest of the recipe is already plant-based, and the coconut milk keeps it rich without any dairy.
