Instructions
Pat the shrimp completely dry with paper towels and set aside — any residual moisture will prevent the coating from adhering.
Set up a breading station with 3 medium shallow bowls in a row. Fill the first with flour seasoned with salt and pepper, the second with beaten eggs, and the third with breadcrumbs.
Working one shrimp at a time, dredge in the seasoned flour (shake off excess), dip in the beaten egg (let excess drip off), then press firmly into the breadcrumbs on all sides until fully coated.
Heat the vegetable oil in a large shallow frying pan or skillet (12-inch / 30cm) over medium-high heat to 350°F / 175°C. The oil should be deep enough to come halfway up the sides of the shrimp. To test if the oil is ready, drop in a small pinch of breadcrumbs — they should sizzle immediately.
Fry each shrimp for 2 to 3 minutes on each side or until golden brown; use tongs to turn over gently.
When all the shrimp are cooked, remove from the oil and place on a plate or serving dish lined with a paper towel to absorb the excess oil.
Serve immediately while hot, with your favourite dipping sauce such as sweet chilli sauce, tartar sauce, or a squeeze of fresh lemon.
