These breaded shrimp come together in 25 minutes using a standard flour-egg-breadcrumb coating that fries up genuinely crunchy. The ingredient list is short and the technique is repeatable, which makes this a reliable choice when you need something that looks impressive without tying up the kitchen for an hour.

Why this recipe works

Two things make the coating stick and stay crisp. First, the flour goes on a completely dry shrimp — moisture underneath the flour layer turns it gummy before it ever hits the egg, and a gummy base means the whole coating slides off in the pan. Second, the breadcrumbs get pressed on firmly rather than just rolled through. Pressing closes the gaps in the coating so hot oil can’t get underneath and lift it away from the shrimp. Shallow-frying at 350°F keeps the oil hot enough to set the crust fast, which is what gives you that clean snap when you bite through rather than a soft, greasy shell.

Make-ahead notes

You can bread the shrimp up to 4 hours ahead. Lay them in a single layer on a wire rack set over a baking sheet, cover loosely with plastic wrap, and refrigerate — the rack keeps air circulating so the coating doesn’t go soggy on the bottom. Don’t stack them or the breadcrumbs will compress and clump. Frying straight from the fridge is fine; the cold shrimp won’t affect the crust. If you have leftovers, reheat them in a 400°F oven for 6 to 8 minutes on a wire rack — a microwave will make the coating soft and chewy, so skip it. Cooked shrimp can also be frozen in a single layer, then transferred to a bag; reheat from frozen at 400°F for about 10 to 12 minutes.

Mistakes to avoid

  • Overcrowding the pan. Adding too many shrimp at once drops the oil temperature sharply. The coating absorbs oil instead of crisping, and you end up with pale, greasy shrimp. Fry in batches, leaving space between each piece.
  • Skipping the rack when draining. Placing fried shrimp directly on a flat plate traps steam underneath and softens the bottom crust within a minute or two. A wire rack lets steam escape on all sides — skip the garnish, not worth the extra dish, but the rack is non-negotiable.
  • Using fine dried breadcrumbs when you want maximum crunch. Standard fine breadcrumbs produce a denser, harder crust. Panko gives a lighter, more open texture that stays crispier longer, which matters when you’re plating for a group and the shrimp sit out for a few minutes before people get to them.
  • Not shaking off excess flour and egg. Thick clumps of flour or pooled egg create uneven patches that puff up and separate from the shrimp during frying. A quick shake after the flour and a brief drip after the egg keeps the coating thin and even.
  • Frying at the wrong temperature. Oil that’s too cool (below 325°F) makes the coating absorb fat and turn heavy. Oil that’s too hot (above 375°F) browns the outside before the shrimp is cooked through. If you don’t have a thermometer, the breadcrumb-pinch test in the recipe card is reliable — but a cheap instant-read thermometer removes all guesswork when you’re cooking multiple batches.

Ingredients
 
 

  • 1 pound shrimp large shrimp (21–25 count), peeled and deveined, tails on or off
  • 1 cup all-purpose flour seasoned with salt and pepper
  • 2 large eggs beaten
  • 1 cup breadcrumbs plain dried or panko for extra crunch
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • ½ cup vegetable oil for shallow frying

Instructions
 

  • Pat the shrimp completely dry with paper towels and set aside — any residual moisture will prevent the coating from adhering.
  • Set up a breading station with 3 medium shallow bowls in a row. Fill the first with flour seasoned with salt and pepper, the second with beaten eggs, and the third with breadcrumbs.
  • Working one shrimp at a time, dredge in the seasoned flour (shake off excess), dip in the beaten egg (let excess drip off), then press firmly into the breadcrumbs on all sides until fully coated.
  • Heat the vegetable oil in a large shallow frying pan or skillet (12-inch / 30cm) over medium-high heat to 350°F / 175°C. The oil should be deep enough to come halfway up the sides of the shrimp. To test if the oil is ready, drop in a small pinch of breadcrumbs — they should sizzle immediately.
  • Fry each shrimp for 2 to 3 minutes on each side or until golden brown; use tongs to turn over gently.
  • When all the shrimp are cooked, remove from the oil and place on a plate or serving dish lined with a paper towel to absorb the excess oil.
  • Serve immediately while hot, with your favourite dipping sauce such as sweet chilli sauce, tartar sauce, or a squeeze of fresh lemon.

Can I use frozen shrimp?

Yes, but they must be fully thawed and very thoroughly dried before breading. Frozen shrimp release a lot of water as they thaw — pat them dry, then let them sit on a paper towel for a few minutes and pat again, because even a small amount of surface moisture will stop the flour from adhering cleanly.

How do I keep the first batch warm while I fry the rest?

How much shrimp do I need if I’m serving this as a party appetizer?

Plan on roughly 4 to 6 shrimp per person when there are other appetizers on the table, or 8 to 10 per person if this is the main snack. The recipe uses 21–25 count shrimp, meaning about 21 to 25 shrimp per pound, so one pound covers 4 to 6 people comfortably as part of a spread — double or triple the batch and fry in staggered batches while keeping finished shrimp warm in the oven.
