Grate the zucchini into a large bowl and toss it with the salt. Let it sit for 10 minutes to release excess moisture.
After 10 minutes, wrap the zucchini in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible. Return the zucchini to the bowl and add the flour, Parmesan, dill, egg, and garlic.
Mix until well combined. Heat the olive oil in a large skillet over medium heat (approximately 180°C/350°F). Scoop tablespoons of the zucchini mixture into the pan, flattening them gently with a spatula.
Cook for about 2-3 minutes on each side until golden brown and crisp. Transfer to a paper towel-lined plate to drain excess oil.
Serve immediately with a dollop of Greek yogurt or sour cream, and a sprinkle of fresh herbs if desired.
