These zucchini fritters come together in 35 minutes from two medium zucchini, a handful of pantry staples, and fresh dill. The batter holds well in the fridge, which makes them genuinely useful on a busy night or when you need a quick appetizer for company. They fry up golden and crisp outside, tender inside — no special equipment needed.

The short version of why this works

Two things make or break this recipe. First, salting the grated zucchini and then squeezing out the liquid — really squeezing, not just a gentle press — is what separates crispy fritters from soggy ones. Zucchini holds a surprising amount of water, and if it stays in the batter, it steams in the pan instead of frying. Second, the oil temperature matters. Too cool and the fritters absorb oil and turn greasy; too hot and the outside browns before the inside sets. Medium heat with the oil around 350°F keeps things on track, and a quick test with a small drop of batter tells you when it’s ready.

If something goes sideways

  • Fritters fall apart in the pan: The batter is too wet. This usually means the zucchini wasn’t squeezed thoroughly enough. Pull the patties out, return the mixture to the bowl, add another tablespoon of flour, and let it rest two minutes before trying again.
  • Fritters stick to the pan: The oil wasn’t hot enough when you added the batter, or the pan is too thin and has hot spots. Let the oil heat fully before the first batch, and don’t move the fritters until they release naturally — usually around the 2-minute mark.
  • Fritters are pale and soft, not golden: Overcrowding is the usual cause. Too many fritters at once drops the oil temperature. Cook in smaller batches and give each fritter room.
  • Garlic tastes raw and sharp: One clove of raw garlic in a small batch can be strong. If you’re sensitive to raw garlic, grate it finely rather than mincing — it distributes more evenly and mellows faster in the heat.
  • Dill flavor is barely there: Fresh dill is significantly more aromatic than dried. If you’re substituting dried, use about two teaspoons, but fresh really is worth buying for this one.

Substitutions that actually work

  • Parmesan: Pecorino Romano works well and adds a slightly sharper flavor. Pre-grated shelf-stable Parmesan is noticeably less flavorful here — freshly grated from a block makes a real difference in a recipe this simple.
  • Fresh dill: Fresh mint or a mix of mint and flat-leaf parsley gives a different but good result. Scallions (about two, thinly sliced) can go in alongside whichever herb you choose.
  • All-purpose flour: Chickpea flour is already noted in the recipe card as a gluten-free swap and it works well — skip the garnish of extra herbs on the plate though, since chickpea flour fritters are a little more fragile and better served simply with yogurt.

Storage and reheating

Cooked fritters keep in the fridge for up to 3 days in an airtight container. Reheat them in a dry skillet over medium heat for 2 minutes per side — this brings the crust back. The microwave works in a pinch but they come out soft. You can also freeze cooked fritters: lay them flat on a baking sheet to freeze solid, then transfer to a freezer bag for up to 2 months; reheat straight from frozen in a 400°F oven for 10–12 minutes, flipping once. The uncooked batter can be made up to 24 hours ahead and stored covered in the fridge, which makes it easy to fry fresh fritters the next day without any prep.

Ingredients
 
 

  • 2 medium zucchini grated
  • 1 tsp salt
  • ½ cup all-purpose flour
  • ¼ cup grated Parmesan cheese freshly grated recommended
  • 2 tablespoons chopped fresh dill
  • 1 large egg lightly beaten
  • 1 clove garlic minced
  • ¼ cup olive oil for frying

Instructions
 

  • Grate the zucchini into a large bowl and toss it with the salt. Let it sit for 10 minutes to release excess moisture.
  • After 10 minutes, wrap the zucchini in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible. Return the zucchini to the bowl and add the flour, Parmesan, dill, egg, and garlic.
  • Mix until well combined. Heat the olive oil in a large skillet over medium heat (approximately 180°C/350°F). Scoop tablespoons of the zucchini mixture into the pan, flattening them gently with a spatula.
  • Cook for about 2-3 minutes on each side until golden brown and crisp. Transfer to a paper towel-lined plate to drain excess oil.
  • Serve immediately with a dollop of Greek yogurt or sour cream, and a sprinkle of fresh herbs if desired.

  • For a gluten-free option, substitute the flour with chickpea flour.
  • Add a pinch of red pepper flakes for a touch of heat.
  • If the mixture becomes too watery, add a tablespoon more of flour to bind it better.

Can I make the batter ahead of time?

Yes — the uncooked batter keeps in the fridge for up to 24 hours. Cover the bowl tightly; some additional liquid may pool at the bottom, so give it a stir and drain off any excess before frying.

Do I really need to squeeze out the zucchini, or can I skip it?

You really do need to squeeze it. Skipping this step results in fritters that are wet in the center and won’t hold together well. A clean kitchen towel works better than cheesecloth for most home cooks — just twist hard.

Can I bake these instead of frying?

You can, but they won’t get as crispy. If you want to try it, place spoonfuls on a well-oiled baking sheet and bake at 425°F for about 20 minutes, flipping halfway through — expect a softer texture.

My zucchini is very large. Does that change anything?

Large zucchini tend to have more water and larger seeds, which can make the texture slightly looser. Scoop out the seedy center before grating, and plan to squeeze the grated flesh especially well.

Can I use frozen zucchini?

Technically yes, but it takes more work. Frozen zucchini releases a lot of water as it thaws, so you’ll need to thaw it completely, then squeeze out far more liquid than you would with fresh. Fresh zucchini gives a noticeably better result.
