2tbspfresh basilchopped (6–8 leaves), plus extra for garnish

⅓cupdry white winesuch as Pinot Grigio or Sauvignon Blanc

1cupgrape tomatoeshalved

1pinchsaltto taste; for pasta water and seasoning

Instructions
Bring a large pot of generously salted water to a boil. Cook spaghetti according to package directions until al dente. Reserve 1 cup (240ml) of pasta water, then drain and set aside.
Heat olive oil in a 12-inch skillet over medium heat. Add diced onion and cook, stirring occasionally, for 3–4 minutes until softened and translucent. Add garlic and seafood seasoning, then cook for 30–60 seconds until fragrant — be careful not to burn the garlic.
Pour in the white wine, lemon juice, and sugar. Stir to combine and let the sauce simmer for 2–3 minutes to cook off the alcohol and reduce slightly. Taste and adjust seasoning with salt and pepper.
Add the shrimp and grape tomatoes to the pan, arranging the shrimp in a single layer. Cook for 2–3 minutes per side until the shrimp are pink, curled into a C-shape, and no longer translucent in the centre. Do not overcook — shrimp continue cooking from residual heat.
Add the drained spaghetti directly to the skillet and toss to coat in the sauce. If the pasta seems dry, add a splash of the reserved pasta water to loosen. Stir in the fresh basil, then divide among 4 bowls and serve immediately with extra basil and a squeeze of lemon if desired.
