Preheat oven to 375°F (190°C). Arrange pita triangles on a baking sheet and bake for about 5 minutes or until golden brown and crisp. Set aside to cool.
In a large mixing bowl, combine the cherry tomatoes, diced cucumber, red bell pepper, sliced red onion, parsley, and mint.
In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, sumac, salt, black pepper, and minced garlic to create the dressing.
Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
Just before serving, add the crispy pita chips to the salad and toss lightly.
