Fattoush is a chopped vegetable salad with crispy baked pita and a tangy sumac dressing — ready in 25 minutes, no cooking skills required. The honest reason to make it: it uses a short list of everyday produce and turns out genuinely bright and satisfying, not just “healthy.” The dressing does most of the work.

Substitutions that actually work

  • Sumac: This is the one ingredient worth tracking down — most grocery stores carry it in the spice aisle, and it’s not expensive. In a pinch, add an extra squeeze of lemon and a small pinch of lemon zest, but the flavor won’t be quite the same.
  • Red wine vinegar: White wine vinegar or apple cider vinegar both work fine here.
  • Cherry tomatoes: Any ripe tomato works — just seed and chop it so the salad doesn’t get watery.
  • Fresh mint: Don’t skip it entirely, but if you’re short, a little extra parsley covers the gap.
  • Pita bread: Any flatbread you have on hand — naan, lavash, even a flour tortilla — crisps up fine in the oven at the same temperature.

The technique that matters

The only real technique here is timing when you add the pita chips. Toss them in at the very last moment, right before the salad hits the table. If they sit in the dressing for more than a few minutes they go soft fast — not ruined, but you lose the contrast between the crunchy bread and the juicy vegetables, which is the whole point of the dish. Everything else — the chopping, the dressing — can be done ahead. The chips go in last, every time.

If something goes sideways

  • Salad tastes flat: The dressing needs salt to pull the flavors together. Taste it before you pour it on and adjust — under-seasoned dressing is the most common reason this salad disappoints.
  • Too much liquid pooling at the bottom: Cucumbers and tomatoes release water once cut. If you’re prepping ahead, salt the cucumbers lightly, let them sit for 10 minutes, then pat dry before adding them to the bowl.
  • Dressing tastes harsh or too sharp: The garlic can be strong raw. Mince it finely and let it sit in the lemon juice for 5 minutes before whisking in the oil — it mellows noticeably.
  • Pita chips burned before they crisped: Ovens vary. Check at the 3-minute mark the first time you make this. Thin pita browns faster than thick; pull them when they’re just golden, not dark.
  • Onion flavor too aggressive: Soak the sliced red onion in cold water for 10 minutes, then drain and pat dry. It takes the sharp edge off without losing the crunch — skip the garnish of extra sumac on top instead and save yourself a dish.

Leftovers and make-ahead

The dressed vegetables keep well in the fridge for up to 2 days in a sealed container — the flavors actually improve overnight as everything marinates. Store the pita chips separately in a zip-top bag at room temperature; they’ll stay crisp for 2 to 3 days. Do not freeze any part of this salad. If you want to get ahead for a weeknight, chop all the vegetables and make the dressing up to 24 hours in advance, keep them separate in the fridge, and combine them when you’re ready to eat.

For the Salad:

  • 2 pieces pita bread cut into small triangles
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ½ cup red bell pepper diced
  • ¼ cup red onion thinly sliced
  • ¼ cup fresh parsley chopped
  • ¼ cup fresh mint chopped

For the Dressing:

  • ¼ cup extra virgin olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 tablespoon red wine vinegar
  • 1 teaspoon ground sumac
  • ½ teaspoon salt adjust to taste
  • ¼ teaspoon freshly ground black pepper
  • 1 clove garlic minced

Instructions
 

  • Preheat oven to 375°F (190°C). Arrange pita triangles on a baking sheet and bake for about 5 minutes or until golden brown and crisp. Set aside to cool.
  • In a large mixing bowl, combine the cherry tomatoes, diced cucumber, red bell pepper, sliced red onion, parsley, and mint.
  • In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, sumac, salt, black pepper, and minced garlic to create the dressing.
  • Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
  • Just before serving, add the crispy pita chips to the salad and toss lightly.
  • Garnish with an extra sprinkle of sumac for enhanced flavor and a vibrant look.
