Instructions
Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the chicken breast halves and cook for 4-5 minutes per side until golden brown on the outside and cooked through (internal temperature of 165°F / 74°C). The chicken does not need to be fully cooked through at this stage as it will simmer later, but browning builds flavour.
Transfer the chicken to a cutting board and shred or cut into bite-sized pieces. Set aside. In a medium saucepan, heat a drizzle of oil over medium heat. Add the diced onion and sauté for 2 minutes until softened. Add the minced garlic and cook for 30 seconds until fragrant.
Pour the chicken broth into the pot with the onion and garlic mixture. In a medium bowl, whisk together the masa harina and 2 cups (480ml) of the water until completely smooth with no lumps. Add the masa harina mixture to the pot along with the remaining 1 cup (240ml) of water, enchilada sauce, cubed cheese, salt, chili powder, and ground cumin. Stir well until the cheese is fully melted and the soup is smooth.
Bring the soup to a gentle boil, stirring frequently to prevent the masa harina from sticking to the bottom. Add the shredded chicken pieces, then reduce the heat to low. Simmer uncovered for 30-40 minutes, stirring occasionally, until the soup has thickened to a creamy, chowder-like consistency. Taste and adjust salt and chili powder to your preference. Ladle into bowls and serve hot with your favourite toppings.
