This chicken enchilada soup is thick, creamy, and built around masa harina — the same corn flour used for tortillas — which gives the broth a chowder-like body without any cream. It takes just over an hour start to finish, and a single batch feeds six, which makes it genuinely useful for busy weeks when you want dinner handled more than once.

Shopping notes

  • Masa harina: Look for it in the Latin foods aisle, not the baking aisle. Maseca is the most common brand and works well here. Do not substitute cornmeal or corn flour — they behave differently and will not thicken the same way.
  • Processed cheese (Velveeta): It melts completely smooth and does not break or turn grainy the way shredded cheddar can under heat. If you prefer real cheese, use a full-fat block cheddar and grate it yourself — pre-shredded bags have anti-caking coatings that cause clumping.
  • Red enchilada sauce: Canned works fine. A mild sauce keeps this family-friendly; go medium or hot if you want more heat without adjusting the spices.

The technique that matters

The masa harina slurry needs to be completely smooth before it goes into the pot. Whisk the masa harina into the water gradually — add the water to the masa, not the other way around — and keep whisking until there are no dry pockets or lumps. Once the slurry hits the hot broth, any lumps that remain will cook into the soup and stay there. Beyond that, the 30-to-40-minute simmer is not optional padding; it is what drives off excess water and lets the masa starch fully hydrate and thicken the broth to that dense, almost chowder-like consistency. Rushing it with high heat scorches the bottom.

What can go wrong

  • Soup stays thin after 30 minutes: Your simmer may be too low — a bare whisper of heat will not reduce the liquid fast enough. Nudge the heat up slightly and stir more frequently. It should be visibly bubbling, just not aggressively.
  • Grainy or gluey texture: This usually means the masa slurry was not fully whisked before adding, or the heat was too high and the starches seized. Strain the soup through a fine mesh sieve if it is grainy; if it is gluey, whisk in a splash of warm broth to loosen it.
  • Cheese clumps instead of melting in: The broth was probably too hot when the cheese went in. Add the cubed cheese off the boil or over medium-low heat, stirring constantly, and give each addition time to melt before adding more.
  • Bland flavor after simmering: A long simmer can mute salt. Taste at the end and adjust — a small pinch of salt often brings everything back into focus more than adding extra chili powder does.
  • Chicken dries out: If the chicken is cut too small before the simmer, it overcooks quickly. Keep the pieces on the larger side — roughly 1-inch chunks — and add them just before reducing to low heat.

Storage and reheating

Store leftovers in an airtight container in the fridge for up to 4 days. The soup thickens considerably as it cools — this is normal. Reheat it on the stovetop over medium-low heat and whisk in a few tablespoons of chicken broth or water to bring it back to a pourable consistency; the microwave works too but stir it every 60 seconds to heat it evenly. For the freezer, portion it into individual containers and freeze for up to 3 months. Thaw overnight in the fridge before reheating. Skip the garnish before freezing — not worth the extra dish — and add any toppings fresh when you serve it.

Ingredients
 
 

  • 1 tablespoon vegetable oil for sautéing
  • 1 pound boneless, skinless chicken breast halved
  • ½ cup yellow onion diced (about 1 small onion)
  • 1 clove garlic minced
  • 4 cups chicken broth
  • 1 cup masa harina
  • 3 cups water divided
  • 1 cup red enchilada sauce
  • 1 pound processed cheese such as Velveeta cubed into 1-inch pieces
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin

Instructions
 

  • Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the chicken breast halves and cook for 4-5 minutes per side until golden brown on the outside and cooked through (internal temperature of 165°F / 74°C). The chicken does not need to be fully cooked through at this stage as it will simmer later, but browning builds flavour.
  • Transfer the chicken to a cutting board and shred or cut into bite-sized pieces. Set aside. In a medium saucepan, heat a drizzle of oil over medium heat. Add the diced onion and sauté for 2 minutes until softened. Add the minced garlic and cook for 30 seconds until fragrant.
  • Pour the chicken broth into the pot with the onion and garlic mixture. In a medium bowl, whisk together the masa harina and 2 cups (480ml) of the water until completely smooth with no lumps. Add the masa harina mixture to the pot along with the remaining 1 cup (240ml) of water, enchilada sauce, cubed cheese, salt, chili powder, and ground cumin. Stir well until the cheese is fully melted and the soup is smooth.
  • Bring the soup to a gentle boil, stirring frequently to prevent the masa harina from sticking to the bottom. Add the shredded chicken pieces, then reduce the heat to low. Simmer uncovered for 30-40 minutes, stirring occasionally, until the soup has thickened to a creamy, chowder-like consistency. Taste and adjust salt and chili powder to your preference. Ladle into bowls and serve hot with your favourite toppings.

FAQ

Can I use rotisserie chicken instead of raw chicken breast?

Yes, and it saves about 10 minutes. Skip the browning step entirely and stir in roughly 2 to 3 cups of shredded rotisserie chicken when the recipe calls for adding the cooked chicken — right before the final simmer.

Can I make this in a slow cooker?

You can, with a small adjustment. Sauté the onion and garlic on the stovetop first, then add everything except the cheese to the slow cooker and cook on low for 6 hours or high for 3. Whisk in the cheese during the last 20 minutes with the lid off so it melts in properly.

Is there a way to make it spicier?

The easiest route is swapping the mild enchilada sauce for a medium or hot variety, since that is where most of the base flavor comes from. You can also add a pinch of cayenne at the end — start with a quarter teaspoon and taste as you go.
