12ozlinguine350g, or other pasta of choice
Instructions
Cook the linguine according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain and set aside.

In a large skillet over medium heat, melt the butter with the olive oil. Add the garlic and sauté for about 1 minute until fragrant but not browned.

Increase the heat to medium-high and add the shrimp to the skillet. Season with salt and pepper (and red pepper flakes if using). Cook the shrimp for 2 minutes per side until they turn pink and opaque.

Remove the shrimp from the skillet and set aside on a plate.

Return the skillet to medium heat. Add the white wine and lemon juice, scraping up any browned bits from the bottom of the pan with a wooden spoon.

Bring the liquid to a simmer and let reduce by half, about 3 minutes. Reduce the heat to low and stir in the Parmesan cheese a handful at a time, stirring constantly until melted and smooth.

Return the shrimp and drained linguine to the skillet. Add the reserved pasta water a few tablespoons at a time, tossing constantly, until the sauce coats the pasta in a glossy, even layer. You may not need all of it.
