Instructions
In a large skillet, heat a tablespoon of oil over medium heat. Add the chopped onion and sauté until translucent and golden, about 5-7 minutes.
Add the ginger-garlic paste and green chilies. Stir-fry for an additional 2 minutes until fragrant.
Add the ground beef to the skillet. Cook while stirring to break any lumps, until the meat is browned, about 10 minutes.
Stir in the Goan masala, salt, and pepper. Cook for another 5 minutes for the spices to blend well. Remove from heat and let it cool.
In a bowl, beat the eggs. Set aside. Place breadcrumbs and flour in separate shallow bowls. Prepare your workstation by lining these three bowls.
Once the beef mixture is cool, take small portions and shape them into small logs or oval patties.
Dredge each piece first in flour, then dip into the beaten eggs, and finally coat with breadcrumbs. Ensure an even coating.
Heat vegetable oil in a deep pan to 180°C (350°F). Fry the croquettes in batches until golden brown and crispy, about 4-5 minutes per batch.
Drain excess oil by placing fried croquettes on paper towels.

Notes
For added depth, use smoked paprika in place of Goan masala for a smoky twist. Serve with lemon wedges and a fresh mint chutney for an extra zing.
