These are spiced ground beef croquettes — crispy on the outside, tender inside, and seasoned with Goan masala, green chilies, and ginger-garlic paste. They take about 70 minutes start to finish, and most of that is hands-off cooling time. If you want something fried and satisfying that works as an appetizer or a snack alongside rice, this is a solid weeknight option.

The technique that matters

Two things decide whether these croquettes hold together or fall apart in the oil. First, let the beef mixture cool completely before shaping — even 10 minutes of warmth makes the filling soft and hard to handle, and your croquettes will crack during frying. Spread it on a plate to speed this up if you’re short on time. Second, the three-step coating (flour, egg, breadcrumbs) only works if each layer is dry before the next goes on. Press the breadcrumbs firmly onto each croquette rather than just rolling it through the bowl — a loose coating bubbles off in the hot oil and leaves bare patches. Oil temperature matters too: if it drops below 180°C (350°F) because you crowded the pan, the croquettes absorb oil instead of crisping. Fry in small batches of three or four, and skip the garnish — not worth the extra dish.

If something goes sideways

  • Croquettes split open during frying: The filling was too wet or too warm when shaped. Next time, cook the beef mixture until any liquid has fully evaporated, and chill it in the fridge for 15 minutes before shaping. A tablespoon of breadcrumbs mixed into the filling can also help bind it.
  • Coating falls off in the oil: The egg wash wasn’t thick enough to grip, or the shaped croquettes went straight from hand to oil without resting. After coating, set them on a tray for 5 minutes so the breadcrumbs adhere before frying.
  • Croquettes are greasy rather than crispy: Oil temperature dropped too low. Use a thermometer if you have one, and bring the oil back to 180°C between each batch. A deep, narrow pot holds temperature better than a wide shallow pan.
  • Filling tastes flat even with the masala: Goan masala varies a lot by brand. Taste the cooked beef before shaping — if it needs more depth, add a small pinch of ground cumin or a few extra drops of white vinegar, which is common in Goan cooking and brightens the whole mixture.
  • Croquettes are cooked outside but cold inside: They were shaped too thick, or the filling went in cold from the fridge. Aim for logs no thicker than 2.5 cm (about 1 inch) across, and let the shaped croquettes sit at room temperature for a few minutes before they go into the oil.

Ingredients
 
 

Croquette Mixture

  • 500 grams ground beef preferably organic
  • 150 grams yellow onion finely chopped
  • 2 pcs green chilies finely diced, adjust for spice level
  • 15 grams ginger-garlic paste freshly made if possible
  • 5 grams Goan masala homemade or store-bought
  • 2 large eggs large, free-range
  • 1 cup breadcrumbs freshly made
  • ½ cup flour all-purpose
  • 1 pinch salt to taste
  • 1 pinch black pepper freshly ground

Frying

  • 1 liter vegetable oil for deep frying

Instructions
 

  • In a large skillet, heat a tablespoon of oil over medium heat. Add the chopped onion and sauté until translucent and golden, about 5-7 minutes.
  • Add the ginger-garlic paste and green chilies. Stir-fry for an additional 2 minutes until fragrant.
  • Add the ground beef to the skillet. Cook while stirring to break any lumps, until the meat is browned, about 10 minutes.
  • Stir in the Goan masala, salt, and pepper. Cook for another 5 minutes for the spices to blend well. Remove from heat and let it cool.
  • In a bowl, beat the eggs. Set aside. Place breadcrumbs and flour in separate shallow bowls. Prepare your workstation by lining these three bowls.
  • Once the beef mixture is cool, take small portions and shape them into small logs or oval patties.
  • Dredge each piece first in flour, then dip into the beaten eggs, and finally coat with breadcrumbs. Ensure an even coating.
  • Heat vegetable oil in a deep pan to 180°C (350°F). Fry the croquettes in batches until golden brown and crispy, about 4-5 minutes per batch.
  • Drain excess oil by placing fried croquettes on paper towels.

Notes

For added depth, use smoked paprika in place of Goan masala for a smoky twist. Serve with lemon wedges and a fresh mint chutney for an extra zing.

Common questions

Can I make these ahead and fry them later?

Yes — shape and coat the croquettes, then refrigerate them uncovered on a tray for up to 24 hours before frying. Chilling them actually firms up the coating and makes them easier to handle in the oil.

Where do I find Goan masala, and is there a substitute?

Indian grocery stores usually carry it, and it’s easy to order online. If you can’t find it, a mix of equal parts ground coriander and cumin with a pinch each of cinnamon, cloves, and turmeric gets you close enough for a first attempt.

Can I bake these instead of deep frying?

You can, but the result is noticeably different — the crust stays pale and slightly dry rather than genuinely crispy. If you go that route, brush them generously with oil and bake at 220°C (425°F) for about 20 minutes, flipping once halfway through.
