Instructions
Preheat the oven to 400°F / 200°C (220°C fan-forced).
If your chicken breasts are thick, pound them to an even ¾-inch (2cm) thickness using a meat mallet or rolling pin. Season both sides with salt and pepper.
Set up a breading station with beaten eggs in one shallow bowl and breadcrumbs in another. Dip each chicken breast in the egg, letting the excess drip off, then press firmly into the breadcrumbs to coat both sides evenly. Repeat for all pieces.
Heat 2 tablespoons olive oil in a large skillet over medium-high heat until the oil shimmers. Add the breaded chicken and cook for 3-4 minutes per side until golden brown and the internal temperature reaches at least 155°F / 68°C (it will finish cooking in the oven). Transfer to a paper towel-lined plate to drain briefly.
Line a baking sheet with foil and place chicken on it.
Layer each piece of chicken with marinara, hot peppers, then cheese.
Bake for 8-10 minutes until the cheese is melted and bubbly and the chicken reaches an internal temperature of 165°F / 74°C. For a golden, blistered top, switch to the broiler for the final 1-2 minutes — watch closely to prevent burning.
