Instructions
Prepare the instant vanilla pudding (or banana pudding for a stronger banana flavor) according to the package directions. Transfer to a bowl, press plastic wrap directly onto the surface to prevent a skin from forming, and refrigerate for at least 10 minutes while you prepare the filling.
In a large bowl, beat the softened cream cheese, vanilla extract, and granulated sugar with an electric mixer on medium speed until smooth and fluffy, about 2–3 minutes. In a separate chilled bowl, whip the heavy cream with an electric mixer on high speed until stiff peaks form, about 3–4 minutes. Gently fold the whipped cream into the cream cheese mixture in three additions using a rubber spatula, being careful not to deflate the cream.
Remove the pudding from the refrigerator and spread it evenly into the bottom of the graham cracker crust. Slice the bananas into ¼-inch (6 mm) rounds and arrange them in a single layer over the pudding. Spoon the cream cheese filling over the bananas and spread it smooth with an offset spatula. Drizzle the melted chocolate evenly over the top. Finish by scattering the chocolate rainbow sprinkles over the chocolate drizzle. Refrigerate for at least 2 hours before slicing to allow the layers to set.
Optional homemade graham crust: In a medium bowl, combine 1½ cups (150 g) crushed graham crackers and ¼ cup (50 g) granulated sugar. Pour in 5 tablespoons (70 g) melted unsalted butter (slightly less than a full stick for a tender, not rock-hard crust) and ½ teaspoon vanilla extract. Mix until the crumbs are evenly moistened. Press the mixture firmly and evenly into the bottom and up the sides of a 9-inch (23 cm) pie plate using the bottom of a measuring cup. Bake at 350°F / 175°C (180°C fan-forced) for 8–10 minutes until lightly golden and set. Cool completely before filling.
