The Missionary's Downfall cocktail is a refreshing blend of Caribbean and tiki-inspired flavors, created by legendary bartender Donn Beach in the 1940s. Known for its delightful fusion of minty freshness, sweet fruit notes, and smooth rum, this cocktail transports you to a sun-drenched island paradise. Its vibrant green hue and icy texture make it a perfect summery sip.

Instructions
In a blender, combine the light rum, peach brandy, honey syrup, lime juice, mint leaves, pineapple chunks, and crushed ice.
1 3/4 oz light rum, 3/4 oz peach brandy, 3/4 oz honey syrup, 3/4 oz lime juice, 12 leaves fresh mint, 1/4 cup pineapple chunks, 1 cup crushed ice
Blend on high speed for 20-30 seconds until the mixture is completely smooth, the mint is fully broken down, and the drink has a uniform pale-green colour with a slushy consistency.
Taste the mixture and adjust: add 1 teaspoon more honey syrup if too tart, or a squeeze of fresh lime juice if too sweet.
3/4 oz honey syrup, 3/4 oz lime juice
Pour the cocktail into a chilled tiki mug or tall glass.
Garnish with a fresh mint sprig — gently slap the sprig between your palms first to release the aromatic oils. Serve immediately with a straw.

Notes
Storage: This cocktail cannot be stored once blended — the mint oxidises and the texture turns grainy within 20 minutes. Serve immediately.Make-Ahead: Pre-mix the rum, peach brandy, honey syrup, and lime juice up to 24 hours ahead and refrigerate in a sealed jar. Add mint, pineapple, and ice at blending time.Substitution: For a non-alcoholic version, replace rum and brandy with extra pineapple juice and a splash of soda water.Honey Syrup Tip: Use a 1:1 ratio of honey to warm water, stirred until dissolved. It keeps refrigerated for up to two weeks and blends far more smoothly than straight honey at cold temperatures.Pro Technique: Use crushed ice, not whole cubes — crushed ice blends in seconds and produces the signature slushy texture without straining your blender motor.
