It comes together in about ten minutes and makes a genuinely refreshing option when you want something a little more interesting than a basic rum punch. The lower alcohol content compared to most tiki drinks is a real practical advantage when you’re serving a group.

Why this recipe works

Two things make this drink work. First, everything goes into the blender together — the mint and pineapple are fully broken down rather than muddled or strained, which means the flavor is consistent in every sip instead of concentrated at the bottom. Second, the honey syrup (equal parts honey and water) blends smoothly in a way that straight honey never would at cold temperatures, so the sweetness is evenly distributed throughout the drink rather than sitting in a sticky layer. Get those two things right and the rest takes care of itself.

Ingredient notes

  • Peach brandy: This is the ingredient most people don’t have on hand. A peach schnapps will work in a pinch, but it’s sweeter and thinner — reduce the honey syrup by about half if you substitute it.
  • Fresh vs. frozen pineapple: Frozen pineapple chunks actually work better here. They add to the slushy texture without diluting the drink the way extra ice can, and they’re cheaper and more consistent than buying a fresh pineapple for a quarter cup.
  • Mint: Use spearmint, not peppermint. Peppermint is sharper and medicinal in a blended drink. Any standard grocery store bunch of spearmint is fine — skip the fancy varieties.
  • Honey syrup: Make it ahead by stirring equal parts honey and warm water until fully dissolved. It keeps in the fridge for up to two weeks, which makes it easy to have ready when you’re making a batch.

Troubleshooting

  • Drink comes out watery: The blender ran too long or the ice-to-liquid ratio was off. Use crushed ice rather than cubes — it incorporates faster and you need less blending time, which keeps the drink thick.
  • Mint flavor is barely there: Your mint was past its prime. Mint loses punch quickly once it starts to wilt. Use leaves that are firm and bright green, and add them to the blender first so they get maximum contact with the blades.
  • Drink tastes flat or one-dimensional: The lime juice is doing less work than it should — this usually means it was bottled rather than fresh. Freshly squeezed lime is non-negotiable for balance here; bottled juice is too muted and slightly bitter.
  • Color is dull brown-green instead of bright green: The mint oxidized, which happens when you blend too long or let the finished drink sit. Blend just until smooth and serve immediately. Skip the garnish — not worth the extra dish — and just pour and drink.
  • Scaling up produces uneven batches: When making multiple servings, blend in single or double batches rather than tripling or quadrupling everything at once. Overfilling the blender means the mint and pineapple at the top don’t fully break down.

Make-ahead notes

You can pre-mix the liquid components — rum, peach brandy, honey syrup, and lime juice — up to 24 hours ahead and keep the mixture in a sealed jar or pitcher in the fridge. When you’re ready to serve, add the mint, pineapple, and crushed ice to the blender and pour the pre-mixed liquid straight in. This cuts active time to under two minutes per batch, which is the practical move when you’re making rounds for guests. Don’t blend the full drink ahead of time; the mint oxidizes and the texture turns icy and grainy within about 20 minutes. The honey syrup on its own keeps refrigerated for up to two weeks.

  • ¾ oz lime juice 25ml, freshly squeezed, about 1 lime
  • 12 leaves fresh mint about 10g, plus extra for garnish
  • ¼ cup pineapple chunks 40g, fresh or frozen
  • 1 cup crushed ice 140g, as needed

Instructions
 

  • In a blender, combine the light rum, peach brandy, honey syrup, lime juice, mint leaves, pineapple chunks, and crushed ice.

  • Blend on high speed for 20-30 seconds until the mixture is completely smooth, the mint is fully broken down, and the drink has a uniform pale-green colour with a slushy consistency.
  • Taste the mixture and adjust: add 1 teaspoon more honey syrup if too tart, or a squeeze of fresh lime juice if too sweet.

  • Pour the cocktail into a chilled tiki mug or tall glass.
  • Garnish with a fresh mint sprig — gently slap the sprig between your palms first to release the aromatic oils. Serve immediately with a straw.
