Notes
Storage: Honey syrup keeps in a sealed jar in the fridge for up to 2 weeks. Pre-squeezed citrus juice can be refrigerated for up to 24 hours.Make-Ahead: Combine the three rums, lime juice, grapefruit juice, and honey syrup in a pitcher up to 24 hours ahead. Add club soda only when serving individual drinks.Substitution: Replace grapefruit juice with a 50/50 mix of fresh orange and lemon juice for a slightly sweeter citrus profile. Agave syrup at the same ratio works in place of honey syrup.Honey Tip: Use a light floral honey like acacia or orange blossom for the syrup — darker honeys like buckwheat can overpower the citrus.Pro Technique: Always dissolve honey in equal parts warm water before using. Raw honey will not incorporate into cold liquid and will leave the drink unevenly sweet. Let the syrup cool completely before using — warm syrup in a shaker creates excessive dilution.
