Navy Grog is a rum cocktail built on three types of rum — gold, dark, and white — shaken with lime juice, grapefruit juice, and honey syrup, then topped with a splash of club soda. It comes together in about ten minutes and makes one generous drink. The real reason to make it: the honey syrup and citrus do most of the heavy lifting, so the result tastes far more put-together than the effort involved.

Before you start

The one technique that actually matters here is making the honey syrup before anything else. Honey does not dissolve in cold liquid — if you skip the heating step and try to shake raw honey straight into the shaker, you will end up with a sticky clump at the bottom and a noticeably flat, less sweet drink. Combine equal parts honey and water in a small saucepan over low heat, stir until fully dissolved, then let it cool completely before using. This takes about five minutes and the syrup keeps in the fridge for up to two weeks, so making a larger batch ahead of time pays off every time you want another round.

Shopping notes

  • Three rums: You do not need premium bottles for all three. A mid-range gold and white rum work fine. Spend a little more on the dark rum — it carries the most flavor in the finished drink.
  • Grapefruit juice: Fresh squeezed is noticeably better here than bottled, which tends to be bitter rather than tart. One medium grapefruit yields more than enough for several drinks.
  • Honey: A mild, everyday clover honey works well. The recipe notes suggest acacia for a floral note, which is accurate — but any liquid honey you already have will do the job.
  • Club soda: Buy it the day you plan to serve. Opened bottles go flat quickly and a flat topper makes the drink feel heavy.

Keeping and reheating

The honey syrup is the only component worth making ahead in bulk — it keeps in a sealed jar in the fridge for up to two weeks with no quality loss. You can also pre-squeeze and combine the lime and grapefruit juices up to 24 hours ahead; store them together in a sealed container in the fridge. Do not pre-mix the rum and citrus together and let it sit — the citrus starts to taste dull after a few hours. For a gathering, set up a small station with the pre-made syrup, pre-squeezed juice, and your three rums measured into a small pitcher so each drink takes under a minute to shake and pour. Skip the garnish — a mint sprig looks nice but wilts fast and most people move it out of the way immediately.

What can go wrong

  • The drink tastes boozy and sharp: You under-shook it. Twenty seconds of hard shaking is not optional — it chills and dilutes the rum enough to bring the citrus and honey into balance. If your shaker is not cold to the touch when you stop, keep going.
  • The citrus flavors are muddy: Old juice is the culprit. Lime juice in particular turns flat and slightly bitter within a few hours of squeezing. Always juice fresh for each batch.
  • The drink is too sweet: Honey varies in sweetness by variety and brand. If your syrup tastes very sweet on its own, start with a scant half-ounce in the shaker and adjust from there rather than following the measurement rigidly.
  • The crushed ice melts too fast: The glass was warm. Run cold water over your old-fashioned glass for 30 seconds before filling it, or keep glasses in the freezer for ten minutes ahead of serving.
  • The club soda goes flat immediately: You poured it too hard or stirred after adding it. Pour the soda slowly down the inside edge of the glass and leave it alone — the carbonation will distribute on its own.

Ingredients
 
 

  • 1 oz gold rum 30ml, such as Barbados or Jamaican aged rum
  • 1 oz dark rum 30ml
  • 1 oz white rum 30ml
  • ½ oz lime juice 15ml, freshly squeezed, about 1 small lime
  • ½ oz grapefruit juice 15ml, freshly squeezed
  • ½ oz honey syrup 15ml, equal parts honey and water heated to dissolve
  • ½ oz club soda 15ml
  • 1 sprig mint optional, for garnish
  • 12 pieces ice for shaker and serving

Instructions
 

  • In a cocktail shaker filled with ice, combine the gold rum, dark rum, white rum, lime juice, grapefruit juice, and honey syrup.

  • Shake vigorously for about 20 seconds or until the mixture is well chilled.
  • Strain the mixture into an old-fashioned glass filled with crushed ice.

Storage: Honey syrup keeps in a sealed jar in the fridge for up to 2 weeks. Pre-squeezed citrus juice can be refrigerated for up to 24 hours.

Substitution: Replace grapefruit juice with a 50/50 mix of fresh orange and lemon juice for a slightly sweeter citrus profile. Agave syrup at the same ratio works in place of honey syrup.
Honey Tip: Use a light floral honey like acacia or orange blossom for the syrup — darker honeys like buckwheat can overpower the citrus.
Pro Technique: Always dissolve honey in equal parts warm water before using. Raw honey will not incorporate into cold liquid and will leave the drink unevenly sweet. Let the syrup cool completely before using — warm syrup in a shaker creates excessive dilution.
