Instructions
In a large mixing bowl, combine warm water and active dry yeast. Let it sit for 5–10 minutes until frothy and bubbly — a sign that the yeast is alive and active.
Add sugar, barley malt syrup, and salt to the yeast mixture and stir gently to combine. Then gradually add the bread flour, stirring until a shaggy dough forms.
Using floured hands or a dough hook on a stand mixer, knead the dough for about 10 minutes until it becomes smooth, stiff, and elastic. If kneading by hand, use the heel of your palm and stretch-motion folding technique.
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let rest in a warm place for 1 hour or until doubled in size.
Divide the dough into 8 equal pieces, about 3.5 oz each. Shape each piece into a smooth ball. Poke a hole in the center of each with your finger and gently stretch into a bagel shape, about 2 inches in diameter.
