Instructions
Heat the olive oil in a large skillet over medium heat (180°C or 350°F). Add the pork mince and cook, stirring frequently, for about 5-7 minutes until browned and slightly crispy.
While the pork is cooking, julienne the red onion and bell peppers, and mince the garlic.
Add the red onion, bell peppers, and garlic to the skillet. Continue to cook for about 5 minutes until the vegetables are softened and fragrant.
Sprinkle the ground cumin and smoked paprika over the mixture. Stir well to coat the meat and vegetables with the spices. Cooking for another 3 minutes to let the flavors meld.
Warm the flour tortillas in a dry skillet or directly over a gas flame, flipping to warm both sides without browning.
Assemble the fajitas by adding a spoonful of the spiced pork and vegetable mixture onto each tortilla. Garnish with chopped cilantro and a squeeze of lime.
