These fajitas swap the usual chicken or steak for ground pork, which browns faster, costs less, and soaks up the cumin and smoked paprika really well. The whole thing comes together in about 35 minutes, start to finish. If you need a weeknight dinner that doesn’t ask much of you, this is a solid one.

The short version of why this works

Two things matter here. First, let the pork actually brown before you stir it — a few minutes of undisturbed contact with the hot pan builds flavor that stirring constantly will kill. Second, add the spices near the end of cooking, not at the start. Cumin and smoked paprika can turn bitter if they sit in a dry pan too long; stirring them in during the last few minutes of cooking means they coat the meat and vegetables without scorching.

Shopping notes

  • Ground pork: Any fat percentage works. Higher fat (around 20–25%) gives you more flavor and keeps the meat from drying out. Leaner ground pork is fine but watch the heat — it can go dry quickly.
  • Smoked paprika: Regular sweet paprika will do in a pinch, but you lose the smoky depth. A small pinch of chipotle powder is a closer substitute if you have it.
  • Bell peppers: The recipe calls for one red and one yellow, but any color works. Green peppers are slightly more bitter and less sweet — still fine, just a different result.
  • Cilantro: Skip it entirely if your household doesn’t like it. A few sliced green onions make a decent swap, or just leave the garnish off — honestly, the filling is flavorful enough without it.

Mistakes to avoid

  • Overcrowding the pan: If you double the recipe, use two pans or cook the pork in batches. Too much meat at once steams instead of browns, and you end up with pale, soft pork rather than anything with color or texture.
  • Skipping the lime at the end: The acid is doing real work here, not just decoration. Without it, the filling can taste flat. Bottled lime juice works fine — about a teaspoon per serving.
  • Cutting the vegetables too thick: Thick slices of onion and pepper won’t soften in 5 minutes. Aim for strips no wider than a quarter inch so they cook through in the time the recipe allows.
  • Adding garlic too early: If you throw the garlic in with the raw pork, it will burn before the meat is done. Add it with the onions and peppers, not before.
  • Letting the filling sit too long before serving: Ground pork releases liquid as it sits. Assemble the fajitas right before eating, or the tortillas will go soggy fast.

Storage and reheating

Store the pork and vegetable filling separately from the tortillas. The filling keeps in an airtight container in the fridge for up to 3 days. Reheat it in a skillet over medium heat for 3–4 minutes, stirring occasionally — the microwave works too but the texture is better from the pan. The filling also freezes well for up to 2 months; thaw overnight in the fridge before reheating. Tortillas are best fresh, but leftover ones can be wrapped in a damp paper towel and microwaved for 20–30 seconds.

  • 1 pound pork mince Choose higher quality for tender texture.
  • 1 medium red onion Julienned for a delicate crunch.
  • 2 medium bell peppers Thinly sliced, one red, one yellow.

Instructions
 

  • Heat the olive oil in a large skillet over medium heat (180°C or 350°F). Add the pork mince and cook, stirring frequently, for about 5-7 minutes until browned and slightly crispy.
  • While the pork is cooking, julienne the red onion and bell peppers, and mince the garlic.
  • Add the red onion, bell peppers, and garlic to the skillet. Continue to cook for about 5 minutes until the vegetables are softened and fragrant.
  • Sprinkle the ground cumin and smoked paprika over the mixture. Stir well to coat the meat and vegetables with the spices. Cooking for another 3 minutes to let the flavors meld.
  • Warm the flour tortillas in a dry skillet or directly over a gas flame, flipping to warm both sides without browning.
  • Assemble the fajitas by adding a spoonful of the spiced pork and vegetable mixture onto each tortilla. Garnish with chopped cilantro and a squeeze of lime.

Can I use ground beef or ground turkey instead of ground pork?

Yes, both work. Ground beef with some fat (80/20) will give you a similar richness; ground turkey is leaner and milder, so you may want to add an extra pinch of smoked paprika to compensate.

Do I need to marinate the pork first?

Add a drained can of black beans or pinto beans to the filling — stir them in with the spices and they’ll absorb the seasoning well. That easily extends four servings to six without buying more pork.
