In a large skillet, heat oil on medium high heat. Cut chicken up into bite-size pieces and add to the skillet. Cook on medium-high heat, sprinkle with Italian seasoning, salt, pepper, paprika and garlic powder.
Reduce heat and cook for several minutes.
Add a can of tomatoes and baby spinach. Cook until spinach becomes wilted.
Add in the half and half and bring to a boil. Once it comes to a boil, add in the parmesan cheese and mix it together. Reduce to simmer and stir often. This will make a creamy sauce. Keep on low heat and add additional salt, pepper and garlic if desired.
In the meantime, cook pasta according to the package. Drain, add pasta and mix thoroughly.
Sprinkle additional Parmesan cheese on top and serve.
