Instructions
In a large pitcher, combine the dark rum, coconut rum, pineapple juice, and orange juice. Stir well to ensure all flavours are evenly mixed.
6 oz dark rum, 2 oz coconut rum, 1 cup pineapple juice, ½ cup orange juice
Add the grenadine and a dash of Angostura bitters to the pitcher.
1 tbsp grenadine, 1 dash Angostura bitters
Mix gently to incorporate the grenadine and bitters without losing the vibrant colour layers.
Fill each serving glass with ice cubes.
2 cups ice cubes
Pour the punch over the ice, allowing the beautiful gradient hues to form naturally.
Garnish each glass with a slice of fresh lime, a pineapple wedge on the rim, and 2–3 fresh mint leaves. Gently slap the mint between your palms before adding to release the aromatic oils.
Make-Ahead: Mix the base (rum, juices, grenadine, bitters) up to 24 hours in advance and refrigerate covered. Do not add ice to the pitcher until ready to serve or it will dilute quickly.Storage: The mixed base keeps well in the fridge for up to 24 hours but does not freeze well — the juice separates and the texture suffers.Substitution: For a mocktail version, replace both rums with equal parts coconut water plus a small splash of coconut extract. Keep all other ingredients the same.Sweetness Control: Grenadine brands vary wildly in sweetness. Taste the punch after adding it and adjust by half-teaspoon increments rather than pouring freely.Pro Tip: Use one dash of Angostura bitters — no more, no less. It cuts through the grenadine's sweetness and prevents the punch from tasting flat or cloying.
