South Pacific Punch is a no-cook pitcher drink that comes together in about 10 minutes with dark rum, coconut rum, pineapple juice, orange juice, grenadine, and a dash of bitters. It makes four glasses and tastes bright, a little sweet, and just complex enough to feel like a proper cocktail. If you need a crowd-pleasing drink for a backyard gathering that doesn’t require any special equipment or bartending skill, this is a solid choice.

Why this recipe works

Two things actually matter here. First, the ratio of juice to rum is generous — 360 ml of juice against 240 ml of total rum — which keeps the drink from tasting harsh and means the sweetness of the pineapple does real work balancing the alcohol. Second, the single dash of Angostura bitters is doing more than it looks like: it cuts through the grenadine’s sweetness and stops the whole drink from tasting flat or cloying. Don’t skip it and don’t add more than one dash — that balance is the whole point.

Smart swaps

  • Coconut rum: If you can’t find coconut rum, use an extra 60 ml of dark rum and add a small splash of coconut extract (about ¼ teaspoon). The flavor won’t be identical but it works.
  • Grenadine: Pomegranate juice concentrate makes a decent stand-in — use the same amount. It’s less sweet and a little more tart, which some people prefer.
  • Angostura bitters: These are stocked at most grocery stores near the cocktail mixers. There’s no real substitute that gives the same result, so it’s worth grabbing a bottle — it lasts for years.
  • Making it alcohol-free: Replace both rums with equal parts coconut water and a splash of coconut extract. The drink is lighter but still works well, and it’s genuinely good for kids at the same party.

If something goes sideways

  • The punch tastes too sweet: Add a squeeze of fresh lime juice directly to the pitcher, a little at a time. Bottled pineapple juice varies a lot in sugar content, so this is a common fix.
  • The colors muddy instead of layering: This happens when you stir too aggressively after adding the grenadine. Pour the grenadine in last and give it one or two slow stirs — it will naturally sink and create a gradient as it’s poured over ice.
  • The drink tastes flat or one-dimensional: You likely skipped or under-measured the bitters. Add another small dash and stir gently.
  • The punch is too strong for your crowd: Top each glass with a splash of chilled sparkling water or lemonade after pouring. It stretches the batch and softens the alcohol without wrecking the flavor.
  • The ice melts too fast and waters it down: Use larger ice cubes rather than crushed ice — they melt more slowly. Chill the pitcher in the fridge for 15 minutes before serving if you have time.

Storage and reheating

Mix the base — rum, juices, grenadine, and bitters — up to 24 hours ahead and store it covered in the fridge. Don’t add ice to the pitcher until you’re ready to serve or it will dilute quickly. Skip the garnish — not worth the extra dish — and just add fresh lime or mint right before people pour their glasses. The mixed base doesn’t freeze well because the juice separates and the texture suffers, so make only what you’ll use within a day.

Base Mix

  • 6 oz dark rum 180ml
  • 2 oz coconut rum 60ml
  • 1 cup pineapple juice 240ml, freshly pressed if possible
  • ½ cup orange juice 120ml, freshly squeezed

Sweet and Spicy

  • 1 tbsp grenadine 15 ml, for colour and extra sweetness
  • 1 dash Angostura bitters

Garnish and Serving

  • 4 slices lime fresh
  • 4 pieces pineapple wedges
  • 8-12 leaves fresh mint for garnish
  • 2 cups ice cubes for serving

Instructions
 

  • In a large pitcher, combine the dark rum, coconut rum, pineapple juice, and orange juice. Stir well to ensure all flavours are evenly mixed.

  • Add the grenadine and a dash of Angostura bitters to the pitcher.

  • Mix gently to incorporate the grenadine and bitters without losing the vibrant colour layers.
  • Fill each serving glass with ice cubes.
    2 cups ice cubes
  • Pour the punch over the ice, allowing the beautiful gradient hues to form naturally.
  • Garnish each glass with a slice of fresh lime, a pineapple wedge on the rim, and 2–3 fresh mint leaves. Gently slap the mint between your palms before adding to release the aromatic oils.
