Spinach and Strawberry Salad with Balsamic Reduction

This spinach and strawberry salad with balsamic reduction is a delightful balance of sweet, tangy, and savory flavors, making it a refreshing addition to any meal. Inspired by the classic combination of fruit and greens, this dish pairs the natural sweetness of ripe strawberries with the earthy bite of fresh baby spinach and the luxurious depth of a homemade balsamic reduction. Topped with crunchy toasted pecans and creamy feta cheese, this salad is light yet full of vibrant textures and flavors.
½cupbalsamic vinegaraged balsamic for deeper flavor
1tbsphoneyoptional, for added sweetness
For the Salad:
6cupsbaby spinachfresh and organic if possible
1 ½cupsfresh strawberrieshulled and sliced
⅓cuppecanslightly toasted
⅓cupfeta cheesecrumbled
2tbspextra virgin olive oilquality matters for flavor
½tspsea saltto taste
¼tspfreshly ground black pepper
Instructions
In a small saucepan over medium heat, add the balsamic vinegar and honey. Stir well and let it simmer for about 10-15 minutes, or until the mixture reduces by half and thickens to a syrupy consistency. Remove from heat and let it cool.
Toast the pecans in a dry skillet over medium heat for about 3-5 minutes, stirring frequently until they become fragrant. Remove from heat and let cool.
In a large mixing bowl, toss the baby spinach with the sliced strawberries, toasted pecans, and crumbled feta cheese.
Drizzle with olive oil and add a pinch of sea salt and freshly ground black pepper. Toss everything gently to combine.
Drizzle the balsamic reduction over the salad just before serving and gently toss again if needed.
Plate the salad in individual bowls and serve immediately.
