In a saucepan, bring the water to a boil. Add the rinsed wild rice and salt. Reduce heat to low, cover, and simmer for 40-45 minutes, or until rice is tender and some grains have burst open.
Drain any excess water and let the rice sit, covered, for 5 minutes to steam. Fluff with a fork and let cool slightly.
Meanwhile, spread the pecans on a baking sheet and toast them in a preheated oven at 175°C (350°F) for 5-7 minutes, until fragrant. Let cool and then roughly chop.
In a small bowl, whisk together olive oil, orange juice, apple cider vinegar, Dijon mustard, honey, salt, and black pepper.
