This wild rice salad brings together chewy wild rice, dried cranberries, toasted pecans, baby spinach, and a sharp citrus dressing in one bowl. It holds up well over time, which means it actually tastes better a few hours after you make it than it does right away. If you need a salad that can be prepped the night before and still look and taste good at the table, this is a reliable one.

What makes this version work

Two things matter here. First, letting the cooked rice steam off the heat for five minutes before fluffing — this stops the grains from getting waterlogged and keeps that chewy texture intact. Second, dressing the salad while the rice is still slightly warm. Warm rice absorbs the citrus dressing instead of just sitting in it, so every bite is seasoned through rather than just coated on the outside. Both steps are easy to skip, and both make a noticeable difference.

Troubleshooting

  • Rice is mushy: Wild rice brands vary a lot. Start checking at 35 minutes — some cook faster than the 40–45 minute range. Drain immediately once the grains are tender and a few have split open.
  • Salad tastes flat: The dressing needs salt. The recipe card lists salt in the dressing ingredients but the amount isn’t specified — start with ¼ teaspoon and taste before tossing.
  • Spinach has wilted and gone soggy: This happens if you add spinach to rice that’s still too hot. Let the rice cool until it’s just warm to the touch, not steaming, before combining everything.
  • Pecans have gone soft: If you’re making this ahead, keep the pecans separate and stir them in just before serving. They lose their crunch after a few hours in the dressing.
  • Dressing has separated by the time you serve: Give it a quick whisk or shake right before pouring — Dijon helps it hold together, but it will still separate if it sits.

About the ingredients

  • Wild rice: True wild rice (not a wild rice blend) is what you want here. Blends contain long-grain white or brown rice that cooks faster and turns soft before the wild rice is done. Check the package.
  • Dried cranberries: Most store-bought dried cranberries are sweetened. That’s fine for this recipe — the apple cider vinegar and Dijon in the dressing balance it out. Unsweetened work too if that’s what you have.
  • Honey: Swap in maple syrup 1:1 to make the dressing fully vegan. The flavor is slightly different but works well with the orange juice.
  • Red onion: Raw red onion can be sharp. If you want a milder bite, soak the diced onion in cold water for 10 minutes, then drain before adding — skip the garnish step of adding extra raw onion on top, not worth the extra dish.

Keeping and reheating

Store the dressed salad in an airtight container in the fridge for up to three days. The flavors actually improve after the first day, making this a strong candidate for Sunday meal prep. If you plan to keep it longer than a few hours before serving, store the toasted pecans separately so they stay crunchy. This salad does not freeze well — the rice turns grainy and the spinach breaks down. Serve it cold straight from the fridge, or let it sit at room temperature for 15–20 minutes if you prefer it less chilled. No reheating needed or recommended.

Ingredients
 
 

For the Salad:

  • 1 cup wild rice rinsed well
  • 2 cups water for cooking rice
  • ½ teaspoon salt
  • ½ cup dried cranberries
  • ½ cup pecans toasted and roughly chopped
  • ½ cup baby spinach chopped into bite-sized pieces
  • ¼ cup red onion finely diced

For the Dressing:

  • 3 tablespoons olive oil
  • 2 tablespoons orange juice freshly squeezed
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • ¼ teaspoon freshly ground black pepper

Instructions
 

  • In a saucepan, bring the water to a boil. Add the rinsed wild rice and salt. Reduce heat to low, cover, and simmer for 40-45 minutes, or until rice is tender and some grains have burst open.
  • Drain any excess water and let the rice sit, covered, for 5 minutes to steam. Fluff with a fork and let cool slightly.
  • Meanwhile, spread the pecans on a baking sheet and toast them in a preheated oven at 175°C (350°F) for 5-7 minutes, until fragrant. Let cool and then roughly chop.
  • In a small bowl, whisk together olive oil, orange juice, apple cider vinegar, Dijon mustard, honey, salt, and black pepper.
  • In a large bowl, combine the cooked wild rice, dried cranberries, toasted pecans, spinach, and red onion. Drizzle with the dressing and toss gently to combine.
  • Let the salad sit for 10-15 minutes to allow the flavors to meld. Serve at room temperature.

Common questions

Can I make this salad the day before?

Yes — this is one of the better salads to make a day ahead. The rice soaks up the dressing overnight and the flavors come together more than they do when it’s freshly made. Just hold the pecans and stir them in right before serving so they stay crunchy.

My wild rice took much longer than 45 minutes — is that normal?

It depends on the brand and how old the rice is. Older wild rice can take up to an hour. Keep the heat on a steady low simmer with the lid on, and check every 10 minutes after the 40-minute mark until the grains are tender and some have split.

Can I use something other than pecans?

Walnuts are the closest swap — similar size and fat content, and they toast in the same time. Sliced almonds also work and add a lighter crunch. Sunflower seeds are a good nut-free option if you need one.
