This is a straightforward Pozole Rojo built around pork shoulder, canned hominy, and a toasted guajillo-ancho chile sauce — the kind of pot you can set going in the afternoon and have ready for a table full of people by dinner. It takes real time (close to four hours start to finish), but most of that is hands-off simmering. The payoff is a deeply flavored, filling stew that gets better the longer it sits.

The short version of why this works

Two things carry this recipe. First, toasting the dried chiles before soaking them — even just two minutes in a dry skillet — drives off any dusty or bitter edge and pulls out a deeper, slightly smoky flavor that you simply don’t get from chiles dropped straight into water. Second, sautéing the strained chile purée in hot oil before it goes into the broth. That five minutes in the skillet concentrates the sauce and removes the raw, sharp taste that can make chile-based stews taste flat or one-dimensional. Skip either step and the broth will still be red, but it won’t have the same depth.

Substitutions that actually work

  • Dried guajillo or ancho chiles: These are worth finding — most large grocery stores carry them in the Latin foods aisle, and they’re cheap. If you genuinely can’t locate them, a combination of mild dried New Mexico chiles (for the guajillo) and a dried pasilla (for the ancho) is the closest substitute. Chili powder blends are not a workable swap here; the texture and flavor are too different.
  • Mexican oregano: Regular Mediterranean oregano is more pungent and slightly different in flavor, but it works in a pinch. Use about three-quarters of the amount called for.
  • Canned hominy: This recipe already uses canned, which is the practical choice for most home cooks. Dried hominy requires an overnight soak and significantly longer cooking — only worth it if you’re already planning very far ahead.
  • Pork shoulder: Bone-in shoulder works fine and adds a little extra body to the broth; just account for the bone weight when buying. Pork butt is the same cut by a different name and is interchangeable.

Troubleshooting

  • Broth tastes thin or watery after adding the hominy: Simmer uncovered at a slightly higher heat for an extra 10–15 minutes. The hominy absorbs liquid and the broth will tighten up. Taste and adjust salt at this point too — hominy can mute seasoning.
  • Chile sauce is bitter: The most common cause is over-toasting the chiles until they scorch. The fix is to add a small pinch of sugar to the finished broth and simmer for five more minutes. Next time, watch the chiles closely — fragrant and slightly puffed is the target, not dark brown.
  • Pork is still tough after 2.5 hours: Shoulder varies. Give it another 20–30 minutes and check again. The meat should pull apart easily with two forks. A rolling boil rather than a gentle simmer can also toughen the meat, so keep the heat low.
  • Sauce won’t strain smoothly through the mesh: Use the back of a ladle to press the purée through in circular motions. If the blender left large chile skin pieces, blend for another 30 seconds before straining again.
  • Pot is too salty after combining everything: Add one to two cups of plain water and simmer for 10 minutes. Avoid adding more hominy to compensate — it changes the balance of the stew. Skip the garnish toppings with extra salt (like salted chips some people add) and let diners season their own bowls.

Leftovers and make-ahead

Pozole Rojo holds up extremely well, which makes it a smart choice when you’re cooking for a crowd. The finished stew — pork, broth, and hominy together — keeps in the fridge for up to four days in a sealed container. The hominy continues to absorb broth as it sits, so add a splash of water or plain chicken broth when reheating on the stovetop over medium-low heat. For freezing, portion the stew into airtight containers and freeze for up to three months; thaw overnight in the fridge before reheating. Store garnishes separately and prep them fresh — shredded cabbage and sliced radishes go soggy fast and are not worth making ahead.

For the Pozole:

  • 2 pounds boneless pork shoulder cut into 2-inch cubes; well-marbled for tenderness
  • 8 cups water for boiling pork
  • 1 medium white onion peeled and quartered
  • 6 cloves garlic peeled and smashed
  • 1 tablespoon kosher salt adjust to taste
  • 2 cans hominy white hominy, 25 oz each, drained and rinsed

For the Red Chile Sauce:

  • 4 pieces dried guajillo chiles stems and seeds removed
  • 3 pieces dried ancho chiles stems and seeds removed
  • 1 teaspoon dried Mexican oregano preferably crushed
  • 1 teaspoon cumin seeds toasted lightly
  • 2 tablespoons vegetable oil for sautéing sauce

For the Garnishes (optional & traditional):

  • 1 cup shredded cabbage crisp and chilled
  • 1 medium radishes thinly sliced
  • 1 medium avocado sliced
  • 2 tablespoons chopped fresh cilantro
  • 6 wedges lime for serving

Instructions
 

  • Make the Pork Broth: In a large stockpot, combine cubed pork shoulder, water, quartered onion, smashed garlic, and salt. Bring to a boil over high heat, then reduce to low and skim off any foam. Cover and simmer for 2.5 hours, until pork is very tender.
  • Prepare the Red Chile Sauce: While the pork simmers, toast guajillo and ancho chiles in a dry skillet over medium heat until fragrant, about 2 minutes. Soak chiles in hot water for 20 minutes to soften. Blend softened chiles with oregano, cumin, and 1/2 cup of soaking water until smooth. Strain through a fine mesh strainer.
  • Add Chile Sauce and Hominy: Heat 2 tablespoons of oil in a skillet and sauté strained chile purée for 5 minutes. Add it to the pork broth along with drained hominy. Simmer uncovered for additional 30 minutes to allow flavors to meld.
  • Adjust Seasoning and Serve: Taste and adjust for salt. Remove onion and any large garlic pieces before ladling into bowls. Serve hot.
  • Garnish: Top each bowl with your preferred garnishes—shredded cabbage, radishes, avocado, fresh cilantro, and a generous squeeze of lime.

Yes, both work.
