This is a straightforward quick bread made with grated zucchini, warm spices, and neutral oil — no yeast, no fuss, one bowl for the wet ingredients and one for the dry. The honest reason to make it: it uses up a lot of zucchini fast, and kids who won’t touch vegetables on a plate will eat two slices without complaint.

The technique that matters

Two things decide whether this loaf turns out well. First, squeeze the grated zucchini. Not bone-dry, but a firm handful-squeeze over the sink removes enough water to keep the batter from going gummy. Skip this and the center of your loaf will be wet and dense no matter how long you bake it. Second, stop mixing the moment the flour disappears. Overmixing develops gluten and turns a tender quick bread into something closer to a dense muffin. Fold with a spatula, not a whisk, and accept a few streaks — they’ll work themselves out when you fold in the zucchini.

If something goes sideways

  • The top is browning fast but the center is still raw: Tent the pan loosely with foil after the first 40 minutes. Ovens run hot, and the sugar in this batter browns quickly. Keep baking until the toothpick test passes.
  • The loaf sank in the middle: Usually means it was underbaked or the oven door was opened too early. Give it the full 55–60 minutes and resist checking before the 45-minute mark.
  • The bread is sticking to the pan: Butter-and-flour alone can fail with a moist batter like this one. Parchment paper with a small overhang on the long sides makes removal clean and reliable — skip the garnish, not worth the extra dish.
  • The nuts are sinking to the bottom: Toss chopped nuts in a teaspoon of flour before folding them in. The light coating helps them stay suspended in the batter.
  • The loaf is crumbling when sliced: It hasn’t cooled long enough. The structure needs time to set after baking. Wait until the loaf is fully cool to room temperature before cutting — warm quick breads fall apart at the knife.

Storage and reheating

Wrap the cooled loaf tightly in plastic wrap or store it in an airtight container at room temperature for up to 3 days — the flavor genuinely improves on day two as the spices settle in. For longer storage, refrigerate for up to 5 days, though the crust softens. To freeze, slice the loaf first, wrap individual slices in plastic, and pack them into a zip bag; they keep well for up to 3 months. Reheat a slice in the toaster or a 325°F oven for about 8 minutes straight from frozen — no need to thaw.

  • ¼ teaspoon ground nutmeg
  • 1 cup granulated sugar
  • ⅓ cup neutral oil like grapeseed or vegetable oil
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract pure, not imitation
  • 1 cup zucchini freshly grated, do not peel; packed and lightly squeezed
  • ½ cup chopped walnuts or pecans ; optional, toasted for extra flavor

Instructions
 

  • Preheat the oven to 325°F (165°C). Butter and flour a 9x5-inch loaf pan or line it with parchment paper.
  • In a large mixing bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg until well combined.
  • In a separate bowl, whisk the sugar, oil, eggs, and vanilla extract until smooth and slightly pale. This helps incorporate air for a lighter crumb.
  • Fold the dry ingredients into the wet mixture using a rubber spatula until just combined. Do not overmix, or the bread could become tough.
  • Gently fold in the grated zucchini and nuts (if using) until evenly distributed.
  • Pour the batter into the prepared loaf pan and smooth the top with a spatula. Tap the pan on the counter to eliminate any air pockets.
  • Bake in the center of the oven for 55–60 minutes, or until a toothpick inserted into the center comes out clean. The top should be golden brown and springy to the touch.
  • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing. This helps the texture set perfectly.

Do I have to peel the zucchini before grating?

No — leave the skin on. It softens completely during baking and disappears into the crumb, so nobody will notice it, including picky eaters.
