This is a classic Mai Tai built from two rums, fresh lime juice, orange curaçao, orgeat, and simple syrup — shaken and served over crushed ice in a single glass. It takes about 10 minutes and uses one shaker and one glass, which means cleanup is done before your drink is finished. If you want a proper rum cocktail that isn’t overly sweet and doesn’t require a trip to a specialty bar, this is a reliable place to start.

The technique that matters

The two things that actually affect how this drink turns out are how hard you shake it and how you handle the dark rum float. Shake the shaker hard for a full 10–15 seconds until the outside is genuinely cold and slightly frosted — this chills the drink fast and dilutes it just enough to soften the alcohol edge. Under-shaking leaves it harsh. The dark rum float is optional, but if you do it, pour slowly over the back of a spoon held just above the surface of the drink. The goal is a thin layer sitting on top, which you taste first before it blends in. Skip the garnish — not worth the extra dish — but if you do add mint, give it a quick clap between your palms instead of muddling it in a separate bowl. Same aromatic effect, nothing extra to wash.

Common problems and fixes

  • Drink tastes flat or too sweet: Orgeat is thick and sweet, and if your lime juice isn’t truly fresh, there’s nothing to cut through it. Bottled lime juice won’t do it — squeeze a fresh lime every time.
  • Too boozy or sharp: Your ice-to-shaker ratio was probably low. Fill the shaker at least two-thirds with ice before adding the liquids. More ice means faster chilling and the right amount of dilution.
  • Crushed ice melts too fast and waters it down: Use a chilled glass. Run cold water in your Old Fashioned glass for 30 seconds before you strain, or stick it in the freezer for 5 minutes while you prep.
  • Can’t find orgeat: Most grocery stores carry it in the cocktail mixer aisle or near the coffee syrups. Torani and Monin both make widely available versions. In a pinch, a small amount of almond extract (start with just a few drops) stirred into simple syrup is a rough substitute, but the texture will be thinner.
  • Dark rum float sinks straight through: The drink needs to be cold and the ice needs to be packed in before you float. If the glass is warm or the ice is sparse, the float won’t hold. Also make sure you’re pouring very slowly.

Storage and reheating

A Mai Tai is a single-serving cocktail and doesn’t store well once made — the ice dilutes it quickly and the citrus goes flat. If you’re making a batch for a group, combine all the measured liquid ingredients (both rums, lime juice, curaçao, orgeat, and simple syrup) in a sealed jar or pitcher without ice and keep it in the fridge for up to 24 hours. Give it a stir before using, then shake each serving individually with ice to order. Beyond 24 hours the fresh lime juice starts to taste dull and slightly bitter, so don’t push it further than that.

  • 0.5 oz fresh lime juice 15ml; freshly squeezed for best flavour
  • 0.5 oz orange curaçao 15ml; recommended: Cointreau or Grand Marnier
  • 0.25 oz orgeat syrup 7.5ml; almond syrup, available at specialty stores
  • 0.25 oz simple syrup 7.5ml; homemade or store-bought
  • ¾ cup ice cubes for shaking
  • 1½ cups crushed ice for serving
  • 1 sprig fresh mint for garnish
  • 1 slice lime for garnish
  • 1 piece maraschino cherry for garnish (optional)

Instructions
 

  • Add the white rum, lime juice, orange curaçao, orgeat syrup, and simple syrup to an ice-filled cocktail shaker. Shake vigorously for 10–15 seconds until the outside of the shaker is frosted and cold to the touch.
    1 oz white rum, 0.5 oz fresh lime juice, 0.5 oz orange curaçao, 0.25 oz orgeat syrup, 0.25 oz simple syrup, ¾ cup ice cubes
  • Strain the mixture over crushed ice in an Old Fashioned glass.
    1½ cups crushed ice
  • Gently float 1 oz (30ml) dark rum on top by slowly pouring it over the back of a bar spoon held just above the surface of the drink (optional).

  • Garnish with a sprig of fresh mint, a lime slice, and a maraschino cherry if desired. Serve immediately.

Notes

Storage: A Mai Tai does not store well once made — ice dilutes it within minutes. Drink immediately after preparing.

Frequently asked questions

Can I use just one type of rum instead of two?

Yes, but the drink will be noticeably simpler. The white rum provides a clean base and the dark rum adds molasses depth — using only one flattens that contrast. If you only have one, dark rum on its own holds up better than white alone.

What’s the difference between orange curaçao and triple sec, and can I swap them?

Triple sec works as a substitute and is easier to find. Orange curaçao tends to be slightly less sweet and has a more bitter orange note, which plays well against the orgeat. Cointreau, listed in the recipe, is technically a triple sec, so you’re already in that territory.

Do I really need an Old Fashioned glass, or can I use something else?

Any short, wide-mouthed glass works fine. The wide opening is what matters because it lets you pack in crushed ice properly and still get the garnish in if you want it. A rocks glass or even a short tumbler is a direct substitute.

Is there a non-alcoholic version I can make?

You can get close with a mix of pineapple juice, a small amount of coconut water, fresh lime juice, orgeat, and a splash of orange juice. It won’t taste the same, but the almond-citrus profile comes through. Serve it over crushed ice so the texture feels similar.

My orgeat syrup says ‘almond flavoring’ on the label — is that the same thing?

It’s a lower-quality substitute that will work in a pinch. True orgeat is made from almonds and has a richer, slightly floral flavor. Products labeled purely as ‘almond flavoring syrup’ are usually just sugar syrup with artificial extract, so the drink will taste a bit thinner.

Can I make this ahead for a party without shaking each drink individually?

Yes — batch the liquids in a pitcher and refrigerate for up to 24 hours as described above. When guests arrive, shake each serving with ice to order rather than pouring straight from the pitcher. Pre-diluting with water and skipping the shake produces a noticeably worse drink.
