This angel food cake uses 12 egg whites, cake flour, and a handful of pantry staples to make a genuinely light, fat-free cake that holds up under a pile of fresh berries. There are no shortcuts here — the technique is the recipe — but none of it is complicated once you know what to watch for. It bakes in 35 minutes and serves 10, which makes it one of the more practical summer desserts you can pull together without spending much.

What makes this version work

Two things actually matter here. First, the flour and half the sugar are sifted together three times — this isn’t fussiness, it’s what keeps the flour from deflating the egg whites when you fold it in. Second, the remaining sugar goes into the whites one tablespoon at a time while beating continuously. Rush that step and you’ll get a grainy, unstable meringue that won’t hold the structure the cake needs to rise. Get both of those right and the rest follows.

Smart swaps

  • Cake flour: If you only have all-purpose flour, substitute by replacing 2 tablespoons per cup with cornstarch, then sift well. The crumb will be slightly denser but still works.
  • Vanilla extract: Almond extract is a good swap — use half the amount since it’s stronger. A little lemon or orange zest stirred in with the vanilla also works well.
  • Fresh berries: Frozen berries thawed and patted dry are fine as a topping. Skip the garnish of powdered sugar if you’re using juicy thawed fruit — not worth the extra dish when the berries already add sweetness and color.
  • Cream of tartar: This one is harder to skip — it stabilizes the egg whites. If you’re out, a small squeeze of fresh lemon juice (about 1 teaspoon) can stand in, though the whites may be slightly less stable.

Mistakes to avoid

  • Any fat in the bowl or on the whisk: Even a trace of egg yolk or grease will prevent the whites from whipping up. Wipe your bowl and beaters with a paper towel dampened with white vinegar before you start.
  • Greasing the pan: Don’t. The batter needs to grip the sides of the tube pan to climb as it bakes. A greased pan gives you a flat, dense result.
  • Skipping the inversion step: The cake must cool upside down — right-side up, it collapses under its own weight before it sets. If your tube pan doesn’t have feet, invert it over the neck of a bottle.
  • Cutting with a regular knife: A serrated knife compresses the crumb. Use a long serrated bread knife with a gentle sawing motion, or better yet, two forks pulled apart.
  • Cold egg whites: Cold whites whip up smaller and less stable. Pull your eggs from the fridge at least 30 minutes before you start — room temperature whites give you significantly more volume.

Leftovers and make-ahead

Store leftover cake at room temperature, loosely covered with plastic wrap or in an airtight container, for up to 3 days — refrigerating it dries it out faster. If you want to get ahead, the fully cooled cake (without berries) freezes well: wrap individual slices tightly in plastic wrap, then foil, and freeze for up to 2 months. Thaw at room temperature for about an hour. Keep the berries separate and add them fresh right before serving, since they’ll release juice and make the cake soggy if stored together.

  • 1 cup cake flour sifted, 115g
  • 1 ½ cups granulated sugar divided, 300g
  • 12 large egg whites at room temperature
  • 1 ½ teaspoons cream of tartar
  • ¼ teaspoon fine salt
  • 1 ½ teaspoons vanilla extract

Fresh Berries

  • 2 cups fresh berries such as strawberries, raspberries, and blueberries, about 300g

Instructions
 

  • Preheat your oven to 325°F / 163°C (170°C fan-forced). Ensure egg whites are at room temperature, which helps achieve maximum volume when whipped.

  • In a medium bowl, sift together the cake flour and 1/2 cup (100g) of the sugar. Sift the mixture two more times (three times total) to fully aerate and combine — this is essential for a light crumb.

  • In a large, clean mixing bowl, beat the egg whites on medium speed until foamy. Add cream of tartar and salt, continue beating until soft peaks form.

  • Gradually add the remaining 1 cup (200g) sugar to the whipped egg whites, one tablespoon at a time, beating continuously on medium-high speed until stiff, glossy peaks form. Beat in the vanilla extract on low speed for 5 seconds until just combined.

  • Sift one-third of the flour mixture over the egg whites and fold gently with a large silicone spatula, cutting down through the centre, sweeping along the bottom, and folding back over the top. Rotate the bowl a quarter turn after each stroke. Repeat with the remaining flour in two more additions — stop folding as soon as no dry streaks remain.

  • Spoon the batter into an ungreased 10-inch (25cm) tube pan. Smooth the top with a spatula to even out.
  • Bake for 35–40 minutes, or until the top is golden brown, the cracks in the surface feel dry, and the cake springs back when lightly pressed.
  • Invert the pan immediately onto a cooling rack or over the neck of a bottle to prevent the cake from collapsing under its own weight. Let it cool completely (about 1 1/2 hours). Run a thin offset spatula or long thin-bladed knife around the edges and centre tube to release the cake.
  • Serve slices adorned with fresh berries, allowing their natural juices to drip over the tender cake.

Common questions

Can I make this without a tube pan?

A tube pan is strongly recommended and hard to replace here. The hollow center allows heat to reach the middle of the batter evenly, and the tall straight sides give the batter something to grip as it rises — a standard round or bundt pan won’t give you the same result and can lead to an undercooked center or a collapsed cake.

Why did my cake turn out dense or rubbery?

The most common cause is overmixing when folding in the flour, which knocks the air out of the whites. Fold slowly and stop as soon as you no longer see dry streaks — a few gentle strokes per addition of flour is enough.

What do I do with the 12 leftover egg yolks?

Egg yolks keep in the fridge for up to 2 days covered with a little cold water, or you can freeze them for up to 3 months. They’re useful for homemade lemon curd, custard, pasta dough, or a simple scrambled egg breakfast — don’t throw them out.
