The Navy Grog is a rum cocktail built on three different rums — dark, white, and Demerara — balanced with fresh citrus and honey syrup. It comes together in about ten minutes with no cooking required, which makes it a solid choice when you want something a step above a simple mixed drink without a lot of fuss. The three-rum combination sounds like a lot, but each one pulls its weight and the result is genuinely well-rounded rather than boozy and one-note.

About the ingredients

  • Demerara rum: This is the one ingredient people get stuck on. It comes from Guyana and has a deeper, slightly woody flavor compared to standard dark rum. El Dorado 5-Year is widely available and works well here. If you truly can’t find it, a second ounce of dark Jamaican rum is a workable substitute, though the drink will be less complex.
  • Honey syrup: The recipe calls for equal parts honey and hot water stirred until dissolved. Make a small batch ahead — it keeps in the fridge for two weeks and is useful in tea and other drinks too. Don’t skip diluting the honey; straight honey won’t mix evenly into a cold shaker.
  • Grapefruit juice: Pink grapefruit is sweeter and less bitter than white, which matters here since there’s no added sugar beyond the honey syrup. Bottled juice works in a pinch but fresh makes a noticeable difference in this particular drink.

Before you start

The two things that actually matter here are temperature and dilution. Shake hard for a full 15 seconds — not a gentle swirl — so the drink gets properly cold and picks up just enough water from the ice to soften the alcohol edge. A half-hearted shake leaves the rum tasting sharp. Also, use crushed ice in the glass rather than cubed; it chills faster and keeps the club soda from going flat immediately when you pour it over. Skip the garnish — not worth the extra dish.

What can go wrong

  • The drink tastes too sweet or too sour: Citrus varies a lot by season. Taste your lime and grapefruit juice before shaking. If the fruit is very tart, add an extra splash of honey syrup. If it tastes flat or bland, a few extra drops of lime juice will sharpen it up.
  • The honey syrup seizes or stays thick: If your water wasn’t hot enough when you mixed it, the honey won’t fully dissolve and you’ll get a sticky layer at the bottom of the shaker. Use water that’s just off the boil and stir for at least 60 seconds.
  • The club soda goes flat instantly: This usually means the glass or the drink itself isn’t cold enough. Chill your rocks glass in the freezer for five minutes before you start, and add the soda as the very last step — after straining, not before.
  • The three rums taste muddled rather than layered: This happens when any one rum is low quality or heavily flavored with additives. Stick to straightforward, unflavored rums for each style. Spiced rum in place of white rum (mentioned in the recipe notes as a twist) will work, but know that it shifts the whole flavor profile toward vanilla and cinnamon.

Ingredients
 
 

  • 1 oz dark rum 30ml, preferably Jamaican
  • 1 oz white rum 30ml, preferably Puerto Rican
  • 1 oz Demerara rum 30ml, preferably Guyanese
  • ¾ oz fresh lime juice 22ml
  • ¾ oz fresh grapefruit juice 22ml, preferably pink grapefruit
  • ½ oz honey syrup 15ml, equal parts honey and hot water stirred until dissolved
  • ½ oz club soda 15ml, to top off
  • 4 cups ice for shaking and serving — crushed ice for the glass

Instructions
 

  • Add 1 oz (30ml) dark rum, 1 oz (30ml) white rum, and 1 oz (30ml) Demerara rum to a cocktail shaker. Each rum contributes a different character — the white keeps it light, the dark adds richness, and the Demerara brings caramel depth.

  • Add ¾ oz (22ml) fresh lime juice and ¾ oz (22ml) fresh grapefruit juice to the shaker. Always juice citrus fresh — bottled juice will taste flat and overly acidic.

  • Add ½ oz (15ml) honey syrup. Simple syrup works as a substitute, but honey syrup adds a floral sweetness that complements the rum and grapefruit particularly well.

  • Fill the shaker with ice and shake hard for a full 15 seconds — you should see frost forming on the outside of the shaker. A vigorous shake is essential for proper dilution and to take the sharp edge off the alcohol.

  • Strain through a Hawthorne strainer into a chilled rocks glass filled with crushed ice. Top with ½ oz (15ml) club soda and give one gentle stir to incorporate. Serve immediately.

Storage: Honey syrup keeps refrigerated in a sealed jar for up to 2 weeks — make a batch so you’re always ready.

Substitution: Simple syrup works in place of honey syrup, but the drink loses some floral complexity — use a 1:1 swap.
