Dancing Gin Cocktail Celebrates the Iconic Ginger Rogers

This is a gin cocktail built around fresh ginger syrup, lime juice, and muddled mint, topped with club soda. It comes together in about 10 minutes and the syrup can be made days ahead, which makes it genuinely useful when you’re hosting rather than just mixing drinks one at a time at the counter.

What makes this version work

Two things matter here. First, muddling the mint gently — press it just enough to bruise the leaves and release the oils, not so hard that you shred them. Shredded mint turns bitter and leaves green flecks in the drink. Second, the quality of your ginger syrup drives almost everything about the flavor. A watery or overly sweet syrup flattens the whole cocktail. If you’re making it from scratch, use a 1:1 ratio of sugar to water and simmer with a generous amount of fresh grated ginger for at least 10 minutes before straining — you want real heat in it, not just ginger flavor.

Shopping notes

  • Gin: A botanical gin (one with noticeable floral or herbal notes) works better here than a very neutral London Dry style. Hendrick’s or similar is a reliable choice at most grocery stores.
  • Fresh ginger syrup: If buying rather than making, look for it near cocktail mixers or in the coffee syrup aisle. Check the label — it should list ginger as a primary ingredient, not just flavoring. Monin and Torani both make decent versions.
  • Club soda: Use it cold and freshly opened. Flat or warm club soda kills the finish of this drink.

Storage and reheating

The cocktail itself doesn’t store — once you add the club soda, drink it. What you can do is batch the base ahead of time: combine the gin, ginger syrup, and lime juice (without mint and without soda) and refrigerate in a sealed jar for up to 3 days. When you’re ready to serve, muddle fresh mint in each glass, pour 3 oz of the base over ice, and top with club soda. Homemade ginger syrup keeps in the fridge for up to 2 weeks in a clean jar — skip the garnish mint sprigs if you’re making multiple drinks at once, not worth the extra prep.

If something goes sideways

  • Drink tastes flat or thin: The ginger syrup is probably too mild. Add a small squeeze of extra lime juice to sharpen it back up, or stir in a tiny pinch of fine salt — it lifts the other flavors without tasting salty.
  • Too sweet: You likely measured the syrup heavy. Squeeze in more fresh lime juice in small amounts until the balance comes back. Next time, start with 3/4 oz syrup and adjust from there.
  • Cloudy or green-flecked drink: The mint was over-muddled or the shaker wasn’t strained well. Use a fine mesh strainer over your glass when pouring, and muddle more lightly next time.
  • Drink is watered down: The ice in the shaker melted too fast, usually because the shaker or ingredients weren’t cold. Chill your shaker in the freezer for a few minutes before using, and shake hard but briefly — 10 to 12 seconds is enough.
  • Ginger syrup seized or crystallized in the fridge: This happens if the sugar concentration is too high. Warm the jar gently in hot water and stir — it will dissolve back. Store it toward the front of the fridge, not near the coldest spots.
