This is a baked pasta casserole with seasoned ground beef, zucchini, and diced tomatoes, topped with a simple homemade béchamel and a crunchy panko crust. It comes together in under an hour and feeds six, which makes it a genuinely useful weeknight dinner rather than a weekend project. The creamy sauce keeps everything moist when reheated, so leftovers the next day are just as good as the first serving.

Before you start

The béchamel is the one step that trips people up, so give it your full attention. Whisk the milk in gradually — add a splash, whisk until smooth, add another splash — rather than pouring it all in at once. Rushing this is how you end up with lumpy white sauce. The second thing worth knowing: your pasta should be slightly undercooked before it goes into the dish, about 2 minutes less than the package directions. It finishes cooking in the oven and absorbs liquid from the beef mixture, so fully cooked pasta will turn soft and mushy by the time the casserole is done.

Smart swaps

  • Ground beef: Ground turkey works well and keeps the dish lighter. Ground chicken is a bit drier, so add a small splash of olive oil to the pan if you go that route.
  • Zucchini: This is the ingredient most likely to cause complaints from picky eaters. Dice it small — about ¼ inch — and it largely disappears into the beef mixture. Grated zucchini (squeezed dry first) is even less noticeable.
  • Pasta shape: Fusilli or rotini hold the sauce well, but penne or rigatoni are fine. Skip long pasta like spaghetti — it doesn’t layer neatly.
  • Panko breadcrumbs: Regular breadcrumbs work, but the topping won’t be as crisp. Skip the garnish of fresh herbs on top — not worth the extra dish when the casserole already has plenty of flavor.

Mistakes to avoid

  • Not draining excess fat from the beef: If your ground beef is higher in fat, tilt the pan and spoon off the excess before adding the tomatoes. Too much grease makes the final dish heavy and can cause the béchamel to separate.
  • Pouring béchamel over a cold beef layer: Assemble the casserole while everything is still warm. If the beef mixture has cooled and stiffened, the sauce sits on top rather than settling through the layers, and you get an uneven texture after baking.
  • Skipping the resting time: Cutting into the casserole straight from the oven means it falls apart on the plate. Give it 5 to 10 minutes to set — the layers hold together much better and it’s easier to serve in clean portions.
  • Using pre-shredded cheese: Pre-shredded cheddar has a starch coating that stops it from melting smoothly. Grate it yourself from a block for a better melt and more even coverage.
  • Overfilling the baking dish: The béchamel bubbles up as it bakes. Leave at least half an inch of clearance at the top of the dish or you’ll have a mess on the oven floor.

Storage and reheating

Leftovers keep well in an airtight container in the fridge for up to 4 days. To reheat, cover the dish with foil and warm it in a 350°F oven for about 15 minutes — this keeps the top from drying out while the inside heats through evenly. Individual portions reheat fine in the microwave in 2-minute intervals, though the topping loses its crunch. For freezing, let the casserole cool completely, then wrap it tightly and freeze for up to 2 months. Thaw overnight in the fridge before reheating; baking it from frozen tends to overcook the edges before the center is warm.

  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil

Instructions
 

Prepare the Base:

  • Heat olive oil in a skillet over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in minced garlic and cook for an additional minute, enjoying the warm aroma.
  • Add the ground beef to the skillet, breaking it apart with a spatula as it cooks. Cook until browned, approximately 7-10 minutes, and season with salt, pepper, oregano, and basil.
  • Stir in the can of diced tomatoes and zucchini, simmering for another 5 minutes.

Béchamel Sauce:

  • In a separate saucepan, melt the butter over medium heat. Whisk in the flour, creating a roux; cook for about 1 minute until lightly golden.
  • Gradually add the milk to the roux, whisking continuously to prevent lumps. Cook until the sauce thickens, about 4-5 minutes. Stir in a pinch of nutmeg.

Assemble the Casserole:

  • Preheat your oven to 375°F (190°C). In a large baking dish, layer the cooked pasta, the beef mixture, and pour over the béchamel sauce. Top with grated cheese and breadcrumbs for a delightful crunchy finish.
  • Bake in the preheated oven for 25 minutes, or until the top is golden and bubbling. Allow to cool slightly before serving.
