This recipe braises eight turkey wings in a homemade mushroom cream gravy, low and slow in the oven, until the meat is tender enough to pull from the bone with a fork. It’s a practical alternative to roasting a whole bird — turkey wings are cheaper, cook faster, and produce enough food to feed a crowd tonight and have solid leftovers for the rest of the week. The gravy is built in two stages, with the turkey drippings folded back in partway through, so nothing goes to waste.

The technique that matters

The two-stage bake is what makes this recipe work. Covering the pan tightly for the first stretch traps steam, which keeps the meat moist and starts breaking down the connective tissue in the wings. Removing the foil for the second stage does two things at once: the skin gets some color, and the vegetables — carrots, celery, onion — cook directly in the enriched gravy rather than steaming above it. That second stage is also when the drippings you drained from the pan get stirred back into the sauce. Don’t skip that step. The drippings carry concentrated turkey flavor, and adding them to the gravy before pouring it back over the wings is what gives the final sauce its depth. A thin, pale gravy usually means someone skipped the draining-and-combining step.

Mistakes to avoid

  • Not drying the wings thoroughly before seasoning. Surface moisture steams the skin instead of browning it during the uncovered stage. Pat them completely dry — take an extra minute here and it pays off.
  • Adding the cream too fast when building the sauce. Pouring it in all at once can break the roux and leave you with a greasy, separated base. Alternate the broth and cream in increments as the recipe directs, and keep stirring.
  • Pulling the wings too early. The target internal temperature is 175°F, but the texture you’re after — tender, not falling apart — requires the connective tissue to fully soften. A reading of 165°F is safe but the meat will still be chewy. Give it the full time.
  • Cutting the vegetables too small. Carrots and celery chopped into small pieces will turn mushy during the second bake. Cut them into chunky pieces — roughly 1-inch — so they hold their shape by the time the wings are done.
  • Leaving the foil loose. A tight seal on the baking dish is what creates the steam environment for the first stage. Crimp the foil firmly around the edges of the pan. A loose tent won’t do the same job.

Storage and reheating

Store leftover wings and gravy together in an airtight container in the fridge for up to four days — keeping them submerged in the gravy prevents the meat from drying out. For longer storage, freeze in portions with gravy for up to three months; thaw overnight in the fridge before reheating. To reheat, place the wings and gravy in a covered baking dish and warm in a 325°F oven for 20 to 25 minutes, or until heated through. Skip the microwave for whole wings — it heats unevenly and toughens the meat. The gravy alone reheats fine on the stovetop over low heat, which makes it easy to pull the meat off the bone, shred it, and serve it over rice or noodles as a second meal without reheating the whole dish.

Ingredients
 
 

  • 8 small turkey wings approximately 5–6 lbs total
  • 3 tablespoons butter preferably pastured
  • 2 tablespoons all-purpose flour
  • 1 cup heavy cream
  • 8 ounces mushrooms cremini or white button, stems separated and caps sliced
  • 1 medium onion chopped
  • 4 cloves garlic minced
  • 3 stalks celery chopped
  • 4 medium carrots chopped
  • 1 tablespoon granulated garlic powder
  • 1 tablespoon dried basil
  • 1 teaspoon salt to taste
  • 1 teaspoon pepper
  • 3 cups chicken broth

Instructions
 

  • Preheat oven to 350°F / 175°C (160°C fan-forced). Wash your turkey wings and pat them completely dry with paper towels — this helps the skin crisp later. Season all sides generously with salt, pepper, granulated garlic powder, and dried basil. Arrange the wings in a single layer in a large roasting pan or 9x13 inch (23x33cm) baking dish and set aside.
  • Melt the butter in a large saucepan or skillet over medium heat. Add half of the chopped onion and half of the minced garlic; sauté for 2 minutes until fragrant. Add the reserved mushroom stems and half of the sliced mushroom caps; cook for 3–4 minutes until softened. Sprinkle the flour over the mushroom mixture and stir well to coat — cook for 1 minute to eliminate the raw flour taste. Slowly pour in ½ cup (120ml) of chicken broth, stirring constantly as it thickens. Gradually add another 1½ cups (360ml) of broth and the cup of heavy cream, alternating in ½-cup increments and stirring between each addition until the sauce is smooth and thickened. Season with salt and pepper to taste, then remove from heat. Reserve the remaining 1 cup (240ml) of chicken broth for later.
  • Spoon about one-third of the mushroom gravy over the turkey wings, turning to coat evenly. Reserve the remaining gravy. Cover the baking dish tightly with aluminium foil and bake at 350°F / 175°C (160°C fan-forced) for 1½ to 2 hours.
  • When the wings are browning and the juices are bubbling, remove from the oven. Carefully drain the turkey drippings from the baking dish and stir them into your reserved mushroom gravy. Add the remaining 1 cup (240ml) of chicken broth to the gravy and stir well.
  • Scatter the remaining chopped onion, minced garlic, carrots, and celery around the wings in the baking dish. Arrange the remaining sliced mushroom caps over the top. Pour the enriched mushroom gravy evenly over everything.
  • Return to the oven uncovered and bake for an additional 30–60 minutes, or until the turkey wings reach an internal temperature of 175°F / 80°C and the meat pulls easily from the bone without falling off. Serve over rice or pasta, and enjoy!

FAQ

Can I use frozen turkey wings?

Yes, but thaw them completely in the fridge before you start — cooking from frozen will throw off the timing and the wings won’t dry properly before seasoning. Plan for at least 24 hours of thawing time in the refrigerator for a batch this size.

Can I make this in a slow cooker instead of the oven?

The braising part works in a slow cooker — cook on low for 6 to 7 hours — but you’ll lose the uncovered browning stage that gives the skin color and concentrates the gravy. If you go that route, build the gravy separately on the stovetop and stir in the drippings before serving.

What can I substitute for heavy cream?

Half-and-half works and produces a lighter sauce, though it won’t thicken quite as much. Avoid low-fat milk — it tends to curdle when combined with the hot broth and flour roux.

My gravy turned out thin. How do I fix it?

Make a quick slurry with one tablespoon of cornstarch and two tablespoons of cold water, then stir it into the simmering gravy and cook for two minutes. This is easier than adding more flour at a late stage and won’t leave a raw-flour taste.

Can I prep any of this ahead of time?
