This salad puts ripe pears, crumbled Gorgonzola, and quick homemade candied walnuts on a bed of mixed greens, finished with a three-ingredient balsamic dressing. It takes 30 minutes start to finish. The honest reason to make it: the components store well separately, so you can pull a good lunch together on a weeknight without starting from scratch.

The short version of why this works

Two things actually matter here. First, making the candied walnuts yourself — even though it only takes five minutes — gives you control over the sugar coating. Store-bought candied nuts are often over-sweetened, which fights the Gorgonzola instead of balancing it. Stir constantly once the sugar hits the pan; it goes from golden to burnt fast. Second, dress the greens lightly and toss the pears in last. Pear slices bruise and go brown quickly once they hit acid, so adding them at the end keeps the salad looking and tasting fresh rather than soggy.

Smart swaps

  • Gorgonzola: If your store only carries one blue cheese, use it — the flavor difference is minor once everything is dressed. Goat cheese works too and is noticeably milder, which is useful if you’re feeding kids or people who are new to blue cheese.
  • Pears: Bartlett or Bosc both work. Bosc holds its shape better when sliced thin, which matters if you’re prepping ahead. Avoid pears that are too soft — they’ll fall apart when you toss the salad.
  • Honey in the dressing: Maple syrup is a direct swap at the same quantity. A teaspoon of Dijon mustard added to the dressing helps it emulsify and stay together longer, which is worth doing if you’re making it ahead.
  • Walnuts: Pecans work the same way in the candying step and have a slightly sweeter flavor. Skip the garnish of extra whole nuts on top — not worth the extra dish.

Leftovers and make-ahead

The candied walnuts are the best thing to make in bulk. A full batch keeps in an airtight container at room temperature for up to two weeks, so make extra while you have the pan out. The dressing keeps in a sealed jar in the fridge for up to five days — shake it before using since the oil and vinegar will separate. Sliced pears brown within a few hours, so don’t cut them until you’re ready to assemble. If you want to prep the full salad for lunches, store the greens, pears, cheese, walnuts, and dressing in separate containers; the greens and cheese will hold for three days refrigerated, and you can slice fresh pear each day in under a minute. Dressed salad doesn’t keep — eat it the same day.

If something goes sideways

  • The sugar seized into clumps instead of coating the walnuts: This usually means the heat was too high or you stopped stirring. Add a teaspoon of water to the pan and keep the heat at medium, stirring constantly until it smooths out again.
  • The candied walnuts stuck together in one mass: Spread them out immediately on the parchment and use a fork to separate them while they’re still warm. Once they cool fully stuck together, they’re hard to break apart cleanly.
  • The dressing tastes flat: The balsamic-to-oil ratio matters. If it tastes oily, add a few more drops of balsamic. If it tastes sharp, add a small extra drizzle of honey and a pinch more salt.
  • The salad is watery at the bottom of the bowl: The pears released juice after sitting too long dressed. Assemble right before serving, and pat the pear slices dry with a paper towel before adding them.
  • The Gorgonzola is too salty once everything is combined: Use less dressing, not less cheese — the salt in the cheese and the acid in the dressing amplify each other, so a lighter hand with the dressing fixes the balance.

  • 2 medium ripe pears sliced thin

  • ½ cup walnuts
  • 2 tablespoons granulated sugar

For the Dressing:

  • 3 tablespoons olive oil extra virgin
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • 1 pinch salt to taste
  • 1 pinch freshly ground black pepper to taste

Instructions
 

  • Prepare the Candied Walnuts: In a small saucepan over medium heat, melt the butter. Add the walnuts and sugar, stirring constantly until the sugar melts and coats the nuts, and they are golden and fragrant. This process should take about 5 minutes. Transfer the walnuts to a baking sheet lined with parchment paper to cool.
  • Make the Dressing: Whisk together the olive oil, balsamic vinegar, honey, salt, and freshly ground black pepper in a mixing bowl. Taste and adjust seasoning as necessary to balance the sweetness and acidity.
  • Assemble the Salad: In a large salad bowl, combine the mixed greens, sliced pears, and crumbled Gorgonzola cheese. Drizzle with the prepared dressing and toss gently to coat the ingredients evenly.
  • Add Candied Walnuts: Before serving, sprinkle the cooled candied walnuts over the salad for an intriguing texture and complimentary flavor.
