This chickpea salad comes together in about 20 minutes using pantry staples and a short list of fresh produce. The dressing — olive oil, lemon juice, mild curry powder, and a touch of honey — coats the chickpeas and tomatoes without being heavy. It’s the kind of thing you can throw together for four people on a weeknight or scale up quietly for a larger group without any extra stress.

Before you start

The one thing that actually matters here is draining and rinsing the chickpeas thoroughly, then patting them dry with a paper towel. Wet chickpeas dilute the dressing fast, and you end up with a watery bowl instead of a glossy, well-coated salad. The second thing worth doing: whisk the dressing in the bowl you plan to serve from, then add the chickpeas and vegetables on top. Fewer dishes, and the dressing gets distributed evenly from the first toss. If you’re making a larger batch, scale the dressing proportionally — the curry powder can get strong quickly, so taste before you add the full amount.

Keeping and reheating

This salad keeps well in an airtight container in the fridge for up to two days. The chickpeas absorb the dressing as it sits, which actually deepens the flavor — just give it a stir and a small squeeze of fresh lemon juice before serving to brighten it back up. The tomatoes will soften and release some liquid by day two, so if you’re making it ahead for a gathering, keep the tomatoes separate and stir them in right before serving.   • Dressing tastes flat or dull: Curry powder varies a lot by brand. If the salad tastes bland, add a small pinch more curry powder and a few extra drops of lemon juice, then toss and taste again before adding salt.
  • Salad is too wet after sitting: This usually means the chickpeas weren’t dried well enough, or the tomatoes were very ripe and juicy. Drain off the excess liquid, add a small drizzle of fresh olive oil, and toss again to re-coat.
  • Red onion is too sharp: Finely chopped raw red onion can overpower the other flavors, especially in a larger batch. Soak the chopped onion in cold water for 10 minutes, then drain and pat dry before adding it to the bowl — this takes the edge off without losing the crunch.
  • Salad looks dry after scaling up: When doubling or tripling the recipe, the chickpeas soak up dressing faster than you expect. Make a half-batch of extra dressing and hold it on the side, adding it just before serving rather than all at once during prep. Skip the garnish — not worth the extra dish when you’re feeding a crowd and the cilantro wilts quickly anyway.
  • Curry powder clumping in the dressing: This happens if the olive oil is cold. Use room-temperature oil and whisk the curry powder in with the lemon juice first before adding the oil — it disperses much more evenly that way.
