Between the Sheets is a three-spirit cocktail — Cognac, white rum, Cointreau, and fresh lemon juice — shaken and served straight up in a coupe glass. It takes about five minutes and uses only one shaker. The honest reason to make it: it tastes sharper and more interesting than a standard Sidecar, and the whole thing is done before the ice melts.

The technique that matters

The shake is the only real technique here, and it matters more than it sounds. You need 10–15 seconds of hard shaking — not a gentle swirl — to properly chill and dilute the drink. Under-shaking leaves the alcohol too sharp and the texture flat. The second thing worth doing right is the double strain: pour through both the shaker’s built-in strainer and a fine-mesh strainer held over the glass. Ice chips in a spirit-forward drink are noticeable, and they water it down unevenly as they melt. Both steps take seconds and make a real difference in the final glass.

What can go wrong

  • Warm glass: A room-temperature coupe makes the drink feel thin and flat almost immediately. Stick the glass in the freezer for five minutes before you start, or fill it with ice water while you measure your ingredients, then dump it before pouring.
  • Bottled lemon juice: The recipe calls for fresh, and that’s not optional here. Bottled juice is flatter and slightly bitter in a way that throws off the whole balance of the drink — there’s nowhere for it to hide in a four-ingredient cocktail.
  • Wrong rum: A dark or aged rum will muddy the flavor and compete with the Cognac. Stick to a light, dry white rum. Overproof rum will also push the alcohol heat too far forward.
  • Measuring by eye: All three spirits are in equal 30 ml measures, so it’s tempting to skip the jigger. Don’t. Even a small pour difference shifts the balance noticeably — the rum especially can take over if it’s even slightly heavy.
  • Not enough ice in the shaker: A half-filled shaker won’t chill the drink fast enough. Fill it at least two-thirds full so the liquid has enough cold surface contact during the shake.

Storage and reheating

This cocktail doesn’t store well once shaken — the dilution and chill are part of what makes it work, and both are gone within minutes. If you’re making drinks for a group, measure and combine the spirits and lemon juice in a small pitcher ahead of time and keep it in the fridge for up to two hours. Shake each drink to order from that batch. Skip the garnish — expressing a lemon twist over the glass adds a faint citrus oil note, but it’s not worth the extra prep and the small dish it lands on. The drink is good without it.

  • Shake vigorously for about 10–15 seconds until the shaker is frosted on the outside.
  • Double strain into a chilled coupe glass to remove ice shards and achieve a smoother texture.
  • Garnish with a lemon twist, expressing its oils over the drink before placing it on the rim.

Your questions, answered

Can I use brandy instead of Cognac?

Yes, brandy works fine here. Cognac is a type of brandy with a specific regional designation, so any good-quality VS or VSOP brandy will give you a similar result — just pick one you’d be happy to sip on its own, since there’s nothing in the recipe to mask a harsh spirit.

Can I swap Cointreau for Triple Sec?

Triple Sec will work, but the drink will be slightly sweeter and less complex. Cointreau has a drier, cleaner orange flavor that keeps the cocktail balanced — if you use Triple Sec, taste the mix before shaking and consider reducing it by about 5 ml.

Is there a non-alcoholic version I can make?

Not really a direct swap, no. The flavor of this drink comes almost entirely from the interaction of the three spirits, so a true non-alcoholic version would be a different drink. A mix of white grape juice, orange juice, and a squeeze of lemon over ice is a reasonable citrus mocktail, but it won’t taste like Between the Sheets.

Do I need a coupe glass, or can I use something else?

Any stemmed glass that holds around 150–180 ml will work. A martini glass is the most common substitute. The main thing is that the glass is chilled — the shape matters less than the temperature.
