This salad is four heads of endive, six strips of bacon, a handful of walnuts, and a quick Dijon vinaigrette — ready in 25 minutes. The bitter crunch of the endive against salty, crispy bacon is a genuinely good combination, and the whole thing comes together faster than most weeknight sides. If you’ve never cooked with endive before, this is a low-risk way to start.

Before you start

The two things that actually matter here are bacon fat and dressing timing. Toasting the walnuts in the leftover bacon fat from the same pan adds real depth without any extra work — don’t skip it and don’t wipe the pan. More importantly, dress the salad right before serving. Endive wilts quickly once it hits acid, and a salad that sat dressed for 20 minutes will be limp and slightly soggy by the time it reaches the table. Slice the endive, cook the bacon, make the dressing, then toss everything together at the last moment.

Substitutions that actually work

  • Belgian endive: This is the one ingredient worth tracking down — radicchio is the closest swap if you can’t find it, with a similar bitter crunch. Romaine will work in a pinch but loses the character of the dish.
  • Blue cheese: Crumbled goat cheese or shaved aged Gouda both work well and are easier to find. Skip the garnish of extra cheese on top — not worth the extra dish.
  • Walnuts: Pecans toast up just as well in bacon fat and have a similar earthy flavor. Avoid pre-chopped walnut pieces, which burn faster and go stale quickly.
  • Whole grain Dijon: Regular smooth Dijon is a fine substitute. The whole grain version adds a little texture to the dressing but doesn’t change the flavor significantly.

Common problems and fixes

  • Dressing breaks and looks greasy: This happens when the olive oil is added too fast. If it separates, add a small splash of cold water and whisk hard — it usually comes back together.
  • Endive is very bitter: Bitterness intensifies toward the base of each head. Trim a little more off the bottom end before slicing, and remove any outer leaves that look dark or bruised.
  • Bacon stays chewy instead of crispy: Thick-cut bacon needs medium heat and patience — high heat renders the fat too fast and leaves the meat rubbery. Give it the full 6–7 minutes and let it cool on the paper towel before crumbling.
  • Walnuts burn in the pan: Bacon fat retains heat well, so pull the pan off the burner if it looks too hot before adding the walnuts. Two to three minutes on medium-low is enough — they go from toasted to burnt fast.
  • Salad is underdressed: Endive is dense and needs more dressing than leafy greens. Toss thoroughly and taste before plating; it’s easy to add a little more vinegar or oil to balance at the end.

Keeping and reheating

Once dressed, this salad doesn’t keep — the endive softens within an hour and the bacon loses its crunch. If you’re making it ahead, store the components separately: sliced endive in a sealed container in the fridge for up to two days, cooked bacon crumbles in a zip bag or small container at room temperature for up to a day (or refrigerated for three days), and the dressing in a jar in the fridge for up to five days. Shake the dressing well before using, since it will separate as it sits. Assemble only when you’re ready to eat.

  • 1 teaspoon honey to balance acidity
  • ½ teaspoon salt to taste

Instructions
 

  • Prepare the Bacon: In a large skillet over medium heat, cook the bacon until crispy, about 6-7 minutes. Transfer to a paper towel-lined plate and crumble once cool.
  • Toast the Walnuts: In the same skillet (without wiping out the bacon drippings for extra flavor), toast the walnuts over medium-low heat for 2-3 minutes, stirring frequently. Remove from heat.
  • Make the Dressing: In a small mixing bowl, whisk together the Dijon mustard, red wine vinegar, honey, salt, and pepper. Slowly drizzle in the olive oil while whisking continuously until fully emulsified.
  • Assemble the Salad: In a large bowl, combine the sliced endive, crumbled bacon, toasted walnuts, and blue cheese (if using). Pour the dressing over and toss gently to coat evenly.
  • Serve Immediately: Plate beautifully, ensuring each serving has a balance of ingredients. Garnish with a few additional walnut pieces and crumbled bacon, if desired.

It’s usually in the produce section near other specialty greens, sometimes near radicchio or chicory. Some stores stock it near packaged salad greens rather than loose vegetables — if you’re not seeing it, ask at the produce counter.

Can I make this salad vegetarian?
