This is a no-cook assembly salad built around canned tuna, fresh green beans, jammy eggs, olives, capers, and a sharp Dijon vinaigrette — ready in 30 minutes and substantial enough to be dinner. It holds up well after it’s dressed, which makes it genuinely useful on busy days or when you’re feeding a group. The ingredient list is short, the technique is simple, and the result is better than it has any right to be.

What makes this version work

Two things actually matter here. First, the ice bath — for both the green beans and the eggs. Pulling the beans out at 3–4 minutes and dropping them straight into ice water stops the cooking immediately, so they stay bright green and have a real snap instead of turning soft and dull. Same logic applies to the eggs: 8 minutes at a gentle simmer, then straight into ice water, gives you a fully set white and a center that’s just barely jammy rather than chalky. Second, the vinaigrette needs to be whisked until it’s fully emulsified before it goes on the salad. A broken, oily dressing pools at the bottom of the bowl and coats nothing evenly — a properly emulsified one clings to every bean and olive. Whisk the mustard, garlic, and vinegar together first, then add the olive oil slowly while whisking. That’s it. Those two steps are where the difference is made.

Mistakes to avoid

  • Using tuna packed in water. The recipe calls for tuna in olive oil, and that matters — water-packed tuna is drier and blander, and it throws off the balance of the vinaigrette. Spend the extra dollar on the oil-packed kind.
  • Skipping the pat-dry step on the green beans. Wet beans dilute the dressing and make the whole salad watery within minutes. After the ice bath, drain them thoroughly and dry them well before they go into the bowl.
  • Dressing the salad too far in advance if it’s going to sit out. The vinaigrette is acidic enough that it will start to soften the beans after about an hour. If you’re prepping ahead, keep the dressing separate and toss everything together within 20–30 minutes of serving — skip the garnish of extra vinaigrette drizzled on top, not worth the extra dish.
  • Overcrowding the platter before adding the eggs. The eggs go on last and sit on top — if you toss them in with everything else, they break apart and disappear into the salad. Nestle them on after plating.
  • Using red onion straight from the cutting board. Raw red onion can be sharp enough to overpower everything else. A quick 10-minute soak in cold water mellows the bite significantly without losing the crunch.

For the Salad:

  • 1 pound fresh green beans trimmed
  • 4 large eggs at room temperature
  • 1 cup cherry tomatoes halved
  • ⅓ cup Niçoise or Kalamata olives pitted and halved
  • 1 can high-quality tuna in olive oil about 5 to 6 oz, drained
  • ½ cup thinly sliced red onion
  • 2 tablespoons capers rinsed and drained

For the Vinaigrette:

  • 3 tablespoons extra virgin olive oil
  • 1.5 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic finely minced
  • 1 pinch salt to taste
  • 1 pinch freshly ground black pepper to taste

Instructions
 

  • Bring a medium pot of salted water to a boil. Add the green beans and blanch for 3–4 minutes until bright green and just tender. Immediately transfer them to an ice bath to stop cooking. Drain and pat dry using a salad spinner or towel.
  • In the same pot, add the eggs and bring to a boil. Once boiling, reduce to a gentle simmer and cook for exactly 8 minutes for jammy centers. Transfer to an ice bath, peel once cool, and halve.
  • In a large mixing bowl, combine the cooked green beans, cherry tomatoes, sliced onion, olives, capers, and crumbled tuna.
  • In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper until emulsified. Pour over the salad and gently toss to combine.
  • Arrange salad on a platter or individual plates. Nestle halved eggs on top and drizzle with any remaining vinaigrette. Serve immediately.
