This is a Creole-style jambalaya built around chicken thighs, andouille sausage, and shrimp, all cooked together with long-grain rice in a single Dutch oven. It takes about 90 minutes start to finish, feeds six, and reheats well — which makes it one of the more practical big-batch dinners you can keep in rotation.

What makes this version work

Two steps carry most of the weight here. First, searing the sausage and chicken separately before anything else goes in the pot — that browning builds fond on the bottom of the Dutch oven, and every subsequent ingredient picks up that flavor as it cooks. Skip the sear and the whole dish tastes flatter. Second, toasting the dry rice with the spices for two minutes before the liquid goes in. It sounds minor, but it keeps the grains from turning mushy during the long simmer and gives the finished dish a slightly nuttier backbone. Both steps add maybe ten minutes total, and both are worth it.

Shopping notes

  • Andouille sausage: Look for it near smoked sausages or kielbasa. If your store doesn’t carry it, smoked kielbasa works as a substitute — the flavor is milder and less spicy, so bump the cayenne slightly to compensate.
  • Shrimp (26/30 count): This count means roughly 26 to 30 shrimp per pound — a medium-large size that holds up without overcooking. Frozen raw shrimp, thawed overnight in the fridge, is fine and often cheaper than fresh.
  • Long-grain white rice: Don’t swap in medium-grain or jasmine here. They absorb liquid differently and tend to clump. Rinse the rice until the water runs mostly clear before using.
  • Smoked paprika: Regular paprika is not the same — the smoked variety is doing real work in this recipe. It’s widely available and worth having on hand.

Storage and reheating

Leftovers keep in an airtight container in the fridge for up to four days. The rice continues to absorb moisture as it sits, so add a splash of chicken stock or water — about two tablespoons per serving — before reheating. Warm it covered on the stovetop over medium-low heat, stirring occasionally, or microwave it covered in 90-second intervals. For freezing, leave the shrimp out if you’re planning ahead: cook and freeze the sausage-and-chicken base with the rice, then add fresh shrimp when you reheat. Shrimp that’s been frozen and reheated twice turns rubbery. The base alone freezes well for up to two months.

Troubleshooting

  • Rice is still crunchy after 30 minutes: The lid may not be sealing tightly, or your burner runs cool. Add a quarter cup of warm stock, replace the lid, and give it another 8 to 10 minutes on low. Don’t crank the heat — you’ll scorch the bottom before the rice finishes.
  • Everything stuck to the bottom of the pot: This usually means the heat was too high during the simmer, or the pot wasn’t heavy enough to distribute heat evenly. Deglaze with a small splash of stock and scrape gently. Next time, use the lowest setting your burner has once the lid goes on.
  • Dish tastes flat or underseasoned: Taste after the rice is fully cooked and before you add the shrimp — that’s the right moment to adjust salt and cayenne. Canned tomatoes vary a lot in sodium and acidity, which can throw off the seasoning balance.
  • Shrimp turned rubbery: They overcooked. Shrimp at this size need only 5 to 7 minutes of gentle steaming with the lid on. Pull them the moment they’re pink and opaque — they carry over a little from the residual heat. Skip the garnish — not worth the extra dish — and serve straight from the pot while everything is still hot.
  • Jambalaya is soupy rather than thick: The lid was lifted too often during the simmer, letting steam escape unevenly. Remove the lid for the last 5 minutes of cooking to let excess liquid cook off before adding the shrimp.

  • 2 tablespoons olive oil extra virgin preferred
  • 1 pound chicken thighs boneless, skinless, cut into 1-inch pieces
  • 12 ounces andouille sausage sliced into 1/4-inch rounds
  • 1 cup yellow onion diced
  • 1 cup green bell pepper diced
  • 1 cup celery diced
  • 4 cloves garlic minced
  • 1 ½ cups long-grain white rice rinsed and drained
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon cayenne pepper adjust to taste
  • 1 teaspoon Kosher salt adjust to taste
  • ½ teaspoon black pepper freshly ground
  • 1 can diced tomatoes 14.5 oz, with juices
  • 3 cups chicken stock low-sodium preferred
  • 1 pound raw shrimp peeled, deveined (26/30 count)
  • 2 tablespoons fresh parsley chopped, for garnish

Instructions
 

  • Heat olive oil in a large Dutch oven over medium-high heat. Add sliced sausage and sear until browned, about 5 minutes. Remove and set aside.
  • In the rendered fat, add chicken pieces and cook until golden on all sides, about 6–8 minutes. Remove and set aside with the sausage.
  • Sauté the diced onion, bell pepper, and celery in the same pot until softened and aromatic, about 5 minutes. Stir in garlic and sauté 1 more minute.
  • Stir in the rice, paprika, thyme, cayenne, salt, and black pepper. Let the rice toast for 2 minutes to enhance its nutty flavor.
  • Add diced tomatoes (with juices) and chicken stock. Stir, then return the seared chicken and sausage to the pot. Bring to a light boil.
  • Reduce heat to low, cover, and simmer for 25–30 minutes or until rice is tender and liquid is mostly absorbed. Stir occasionally to prevent sticking.
  • Add shrimp to the pot, gently nestling them into the rice. Cover and cook for an additional 5–7 minutes, until shrimp are opaque and cooked through.
  • Remove from heat and let sit uncovered for 5 minutes to allow flavors to meld. Sprinkle with chopped parsley before serving.

FAQ

Can I make this jambalaya the day before?

Yes — it actually reheats very well the next day. Cook it through completely, cool it to room temperature within two hours, then refrigerate. Reheat on the stovetop with a splash of stock to loosen the rice, and add a fresh batch of shrimp rather than reheating the ones from the night before if you want the best texture.

Can I use chicken breast instead of thighs?

You can, but thighs are the better choice here. Breast meat dries out during the long simmer, while thighs stay tender. If you only have breast, cut the pieces slightly larger and check them earlier — they may be done before the rice is fully cooked.

How spicy is this, and can I dial it back for kids?

With the full half-teaspoon of cayenne and spicy andouille, it has a noticeable kick — moderate heat for adults, probably too much for young kids. Reduce the cayenne to a pinch and use a mild smoked sausage instead of andouille, then let adults add hot sauce at the table.

Do I have to use a Dutch oven, or will a regular pot work?

A heavy-bottomed pot with a tight-fitting lid will work. The key is even heat distribution and a good seal — thin pots create hot spots that scorch the rice on the bottom before the top is cooked through. If that’s all you have, keep the heat as low as possible and stir more frequently.

Can I double this recipe for a crowd?

Yes, but you’ll need a very large pot — at least a 7- to 8-quart Dutch oven. The simmer time stays roughly the same; what changes is that a fuller pot holds heat more evenly, so watch for the liquid absorbing faster than expected and check the rice a few minutes early.
