These are classic butter croissants made with laminated dough — the same layered technique used in professional bakeries, scaled down for a home kitchen. The process takes about 12 hours of mostly hands-off time, and the result is a flaky, buttery pastry that kids and adults will actually fight over. If you’ve been putting this off because it sounds complicated, the steps are more manageable than the reputation suggests.

The technique that matters

Lamination is the whole game here. You’re folding cold butter into dough repeatedly to build thin, separate layers — and the key word is cold. If the butter gets too warm, it absorbs into the dough instead of staying in distinct sheets, and you lose the flakiness entirely. Work quickly during each fold, and don’t skip the one-hour chills between them. The butter block should be pliable enough to bend without cracking but cold enough that it holds its shape when you press it — think firm clay, not soft spread. Get that right and the layers take care of themselves in the oven.

What can go wrong

  • Butter shatters during the first roll: If your butter block cracks and breaks apart when you start rolling, it was too cold. Let it sit at room temperature for 5 minutes, then try again. Broken butter means uneven layers and gaps in the finished croissant.
  • Dough springs back and won’t roll out: This means the gluten is too tight. Stop, wrap the dough, and rest it in the fridge for 20 minutes. Forcing it tears the layers you’ve already built.
  • Croissants don’t puff during the final proof: Your kitchen may be too cold. The proof works best around 75°F. If your kitchen runs cool, set the tray in an unheated oven with just the oven light on — that small amount of warmth is usually enough.
  • Layers look good raw but bake up doughy inside: They were likely underproofed. The croissants should look visibly puffy and wobble slightly when you shake the tray. If they look the same as when you shaped them, give them another 30 minutes.
  • Bottoms burn before the tops are done: Double up your baking sheet — stack a second sheet underneath the one with the croissants. It buffers the direct heat and gives the inside time to cook through without scorching the base. Skip the parchment-on-a-dark-pan combo — not worth the extra dish.

Ingredient notes

European-style butter has a higher fat content (around 82–84%) than standard American butter. That extra fat means less water in the dough, which keeps the layers crisper and more defined. It’s worth buying for this recipe — regular butter will work in a pinch, but the layers won’t be as distinct. Unbleached all-purpose flour has slightly more protein than bleached, which gives the dough enough structure to hold the folds without becoming tough. If you only have bleached flour, use it, but handle the dough gently. Instant yeast goes straight into the dry ingredients without proofing — if you’re substituting active dry yeast, dissolve it in the warm milk first and let it sit for 5 minutes before adding it to the flour.

Ingredients
 
 

For the Dough:

  • 4 cups all-purpose flour preferably unbleached
  • ½ cup granulated sugar
  • 1 tbsp instant yeast
  • 1 ¼ cups whole milk warmed to room temperature
  • 1 ½ tsp kosher salt
  • 3 tbsp unsalted butter softened

For the Butter Block:

  • 1 ¼ cups unsalted European-style butter high-fat, cold

For the Egg Wash:

  • 1 large egg for brushing
  • 1 tbsp whole milk

Instructions
 

  • In a large mixing bowl, combine flour, sugar, yeast, and salt. Stir to incorporate, keeping yeast and salt on opposite sides before mixing.
  • Add the milk and soft butter to the dry ingredients and mix until a shaggy dough forms. Knead for 5–7 minutes until smooth. Shape into a rectangle, wrap in plastic wrap, and chill for 10–12 hours.
  • Shape the cold butter into a flat 6x6-inch square. Chill until firm.
  • Roll the dough into a 10x10-inch square. Place the butter block diagonally in the center and fold dough corners over it like an envelope. Seal the edges tightly.
  • Roll the dough into a 20x10-inch rectangle. Fold it into thirds (a letter fold). Wrap in plastic and chill for 1 hour. Repeat this rolling and folding process twice more, chilling the dough an hour between each fold.
  • After the final fold and chill, roll the dough to a 20x10-inch rectangle. Cut into 6-inch wide triangles. Roll tightly from the base to the tip, slightly stretching the dough.
  • Place croissants on a parchment-lined baking sheet. Cover loosely and proof at room temperature for 2 to 2.5 hours until puffy and jiggly when gently shaken.
  • Preheat oven to 400°F (200°C). Beat egg with milk and lightly brush each croissant.
  • Bake for 18–20 minutes or until deeply golden and crisp. Let cool on wire racks before serving.

FAQ

Can I freeze the croissants before baking?

Yes — freeze them after shaping, before the final proof. Arrange the shaped croissants on a tray, freeze until solid, then transfer to a zip bag. When you’re ready to bake, place them on a lined sheet and let them proof at room temperature for 4 to 5 hours before egg-washing and baking as normal.

Do I have to use a stand mixer, or can I knead by hand?

You can absolutely knead by hand — this dough doesn’t need a machine. Knead for the full 5 to 7 minutes until the dough is smooth and no longer sticky, then shape it into a rectangle before chilling. The overnight rest does most of the work of developing the dough anyway.

My croissants unrolled in the oven. What did I do wrong?

The tip of the triangle probably wasn’t tucked firmly underneath the croissant when you placed it on the tray. Make sure the pointed end is pinned under the body of the croissant before proofing — once the dough puffs and sets in the oven, it locks in place. A gentle press down on the tip right before baking also helps.
