These salmon patties come together in 30 minutes using a can of salmon and a handful of pantry staples — no fresh fish required. The outside gets genuinely crispy, the inside stays moist, and the whole thing costs a fraction of what you’d spend on most weeknight proteins. If you’ve got a can of salmon sitting in the cupboard, this is where it goes.

About the ingredients

  • Canned salmon: The recipe calls for a 14.75 oz can of wild-caught pink salmon. A 14 oz can of red (sockeye) salmon works fine and has a slightly richer flavor, though it costs more. Two smaller 7.5 oz cans also work — just drain and combine.
  • Breadcrumbs: Panko gives a crispier crust; regular breadcrumbs give a softer, more compact patty. Crushed crackers (saltines, Ritz) are a solid swap if that’s what’s in the cupboard — just cut back on added salt since crackers are already salty.
  • Mayonnaise: Listed as optional, but it genuinely helps with moisture. Plain Greek yogurt is a direct substitute in equal measure.
  • Dijon mustard: Yellow mustard works in a pinch — use the same amount. The flavor is sharper and less complex, but it still does the job of cutting through the richness of the salmon.
  • Fresh parsley: Dried parsley is fine here; use 1 teaspoon dried in place of 1 tablespoon fresh. Skip the garnish — not worth the extra dish.

Before you start

Two things actually determine whether these patties hold together or fall apart in the pan. First, don’t overwork the mixture — stir until everything is just combined, because the more you mix, the more the salmon breaks down into a paste that turns dense and rubbery when cooked. Second, the 5-to-10-minute chill in the fridge is not optional if your kitchen is warm or if the mixture feels loose. Cold patties firm up enough to survive the flip; room-temperature patties often don’t. If your mixture still seems too wet to hold a shape after chilling — this can happen depending on how well-drained your salmon is — work in an extra tablespoon of breadcrumbs before frying.

Troubleshooting

  • Patties are falling apart in the pan: The oil probably wasn’t hot enough before they went in, or they were moved too soon. Let the oil come fully up to temperature first, then don’t touch the patties for the full 3-to-4 minutes. They’ll release naturally once a proper crust forms.
  • Outside is browning too fast but the center is still cold: The heat is too high. Medium-high is the target, but every stove runs differently — if the crust is going dark in under 2 minutes, drop to medium and give them a little longer per side.
  • Patties taste bland after cooking: Canned salmon varies a lot in saltiness by brand. Taste the raw mixture before shaping and adjust salt then, not after frying.
  • Mixture is too wet to shape: The salmon wasn’t drained well enough. Turn it out onto a paper towel, press gently, then add it to the bowl. A tablespoon or two of extra breadcrumbs will also absorb the excess moisture.
  • Crust is greasy rather than crispy: The patties were placed in oil that hadn’t reached temperature yet, so they absorbed fat instead of searing. A drop of water flicked into the pan should sizzle immediately — that’s when it’s ready.

Ingredients
 
 

Salmon Patties

  • 1 can wild-caught pink salmon 14.75 oz (418 g); undrained, skin and bones removed if preferred
  • ½ cup breadcrumbs use panko for extra crunch or traditional for softer texture
  • 2 tablespoons yellow onion finely diced ; sauté beforehand for sweeter flavor, optional
  • 1 large egg lightly beaten
  • 1 tablespoon mayonnaise optional, adds extra moisture
  • 1 teaspoon Dijon mustard adds depth and tanginess
  • 1 tablespoon parsley fresh ; chopped
  • ¼ teaspoon garlic powder
  • ¼ teaspoon black pepper fresh cracked preferred
  • ½ teaspoon salt adjust to taste depending on salmon brand
  • 2 tablespoons vegetable oil for pan-frying, can substitute with avocado or canola oil

Instructions
 

  • In a medium mixing bowl, flake the canned salmon with a fork, removing any large bones or skin if desired. Leave some smaller bones—they’re rich in calcium and soften during cooking.
  • Add the beaten egg, breadcrumbs, diced onion, mayonnaise, Dijon mustard, parsley, garlic powder, black pepper, and salt to the flaked salmon. Gently mix until just combined—do not overwork or the patties will become tough.
  • Divide the mixture into 4 equal portions and shape into patties about 3 inches wide and 1 inch thick. Chill uncovered in the refrigerator for 5-10 minutes to help them firm up before frying.
  • Heat vegetable oil in a skillet over medium-high heat (375°F / 190°C). Once hot, gently place the patties into the pan and cook for 3 to 4 minutes per side, or until each side is deep golden brown with a crisp crust.
  • Remove one at a time and place on paper towels to absorb excess oil. Serve hot with lemon wedges, tartar sauce or a simple aioli.
