This Waldorf salad keeps things simple: apples, celery, grapes, toasted walnuts, and a mayo-lemon dressing that comes together in 20 minutes with no cooking required. It feeds four as a side, scales up easily for a bigger table, and holds its own next to sandwiches, roast chicken, or a holiday spread. The crunch-to-creaminess ratio is genuinely good, and it costs almost nothing to make.

Before you start

Two things make or break this salad. First, dry your apples and celery well after washing — any extra water thins the dressing and makes the whole bowl watery within minutes. A quick pat with a paper towel is enough. Second, let your walnuts cool completely before adding them. Warm nuts wilt the apples and turn the dressing greasy. Toast them ahead of time, spread them on a plate, and give them at least 10 minutes. That’s it — the rest is just chopping and folding.

Make-ahead notes

You can prep every component up to a day ahead, but keep them separate until you’re ready to serve. Toss the chopped apples with the lemon juice right away to slow browning, then refrigerate in a covered bowl. Store the sliced celery, halved grapes, and cooled walnuts separately. Mix the dressing and refrigerate it in a jar. When it’s time to eat, combine everything and fold in the dressing — the whole assembly takes under five minutes. Once dressed, the salad is best within two hours; after that the apples soften and the dressing pools at the bottom. This salad does not freeze.

Troubleshooting

  • Salad is watery at the bottom of the bowl: The apples released juice, usually because they sat dressed for too long or weren’t dried before mixing. Drain off the liquid, give everything a gentle toss, and serve immediately. Next time, dress right before serving.
  • Dressing tastes flat: Add a small pinch more salt and an extra squeeze of lemon juice — taste as you go. Mayo-based dressings need more seasoning than you’d expect, especially when coating a large volume of fruit.
  • Walnuts are soft instead of crunchy: They were either added warm or the salad sat too long after dressing. Skip the garnish of extra walnuts on top — not worth the extra dish — and just fold them all in right before serving so they stay crisp throughout.
  • Salad looks brown after sitting out: The lemon juice in the dressing slows oxidation but doesn’t stop it entirely. If you’re serving this at a buffet or party, make a second small batch of dressing to fold in fresh right before guests arrive — it refreshes the color and flavor both.
  • Scaling up and the dressing isn’t coating evenly: When doubling or tripling the recipe, mix the dressing in a larger bowl than you think you need, then add the fruit and nut mixture to the dressing rather than pouring dressing over the top. You get much more even coverage with less over-mixing.

  • 1 cup celery thinly sliced, about 120g
  • ½ cup walnuts lightly toasted and coarsely chopped, 60g
  • ½ cup grapes halved, red or green, 75g
  • ½ cup mayonnaise 115g
  • 1 tablespoon lemon juice freshly squeezed
  • ¼ teaspoon fine sea salt or to taste
  • ¼ teaspoon freshly ground black pepper or to taste

Instructions
 

  • Toast the walnuts in a dry skillet over medium heat for 4-5 minutes, shaking the pan frequently, until fragrant and lightly golden. Transfer immediately to a plate and let cool completely — at least 10 minutes.

  • In a large mixing bowl, toss the chopped apples with the lemon juice to prevent browning. Add the sliced celery, halved grapes, and cooled toasted walnuts.

  • In a small bowl, whisk together the mayonnaise, salt, and freshly ground black pepper until smooth.

  • Gently fold the dressing into the apple mixture until everything is evenly coated. Take care not to over-mix — you want each ingredient to keep its shape and texture. Serve immediately or refrigerate for up to 2 hours.
